- 1/3 cup shortening, margarine, or butter
- 2 T milk
- 2 eggs
- 1/4 cup chopped nuts
Shrimp and Artichoke Risotto

Risotto Melt butter and olive oil in bottom of med sauce pan
- 1 box chicken stock
- 1 1/2 cups arborio rice
- 1 T butter
- 1 T olive oil
- 1/2 medium onion, diced
- 1/2 cup white wine
- 1 cup frozen peas
- 2 T fresh parsley, chopped
- 2 T fresh basil, chopped
- 1 pkg frozen artichoke hearts
- 2 T garlic flavored olive oil, divided
- 1 lb shrimp, peeled and deveined
- salt and pepper to taste
Spinach Quiche

Preheat oven and baking sheet to 375
- 3 T chopped onion
- 2 T butter
- 1 (10oz) frozen chooses spinach, cooked and well drained
- 1 c shredded Swiss cheese
- 1/4 cup grated Parmesan cheese
- 1 T flour
- 1 pie crust
- 1 1/2 cups evaporated milk
- 3 eggs, beaten
- 1 t Worcestershire sauce
- 1/2 t basil
- 1/2 t marjoram
- 1/4 t ground white pepper
Rice Krispie Treats

In large saucepan, melt butter over low heat
- 3 T butter or margarine
- 1 10 oz pkg marshmallows (about 40 OR 4 cups mini marshmallows)
- 6 cups Rice Krispies
Mom's Fudge

Heat margarine and milk over low heat
- 1/2 stick margarine
- 1 small can evaporated milk
- 1 pound powdered sugar
- 6 oz semi sweet chips
- 1 cup walnuts
- 3 T marshmallow creme
Margarita Chicken Pasta Salad

Cook pasta according to desired doneness
- Dressing:
- 4 cups uncooked rainbow rotini
- 1 lb boneless chicken breast, cut into strips
- 1 pkg Old El Paso Seasoning Mix
- 1 T olive or vegetable oil
- 1 (11 oz) can Green Giant Mexicorn, drained
- 1 (15 oz) can black beans, drained and rinsed
- 1/2 cup fresh orange juice
- 2 T olive or vegetable oil
- 1/4 cup sour cream
- 3 T fresh lime juice
- 1 t sugar
- 1/4 t cumin
- 1/8 t salt
- 4 t tequila, if desired
- 1 cup loosely packed cilantro leaves
- 1 (4.5 oz) can chopped green chiles
One Pot Garden Chicken and Noodles

In a heavy 5 quart saucepan, melt butter
- 2 T margarine
- 1 lb boneless skinless chicken breasts, cut into 3/4 inch pieces
- 1/3 cup onion, finely chopped
- 1 can chicken broth
- 1/2 cup No Yolks broad egg noodles, uncooked
- 1 (10 oz) package frozen peas and carrots
- 1 can cream of chicken or cream of mushroom soup
- 3/4 cup 2% milk
- 3/4 cup grated parmesan cheese, divided
- 1 (4 oz) jar chopped pimento, drained
Turkey Tetrazzini

To make ahead: Freeze the uncooked casserole for up to three months
- 8 oz uncooked whole wheat thin spaghetti
- 1 1/2 t canola oil
- 1/2 cup chopped yellow onion
- 1/2 cup chopped celery
- 8 oz fresh cremini mushrooms, sliced (about 2 cups)
- 1 T sherry
- 1 T unsalted butter
- 1 1/2 T flour
- 1 cup unsalted chicken broth
- 3 oz parmesan cheese, grated (about 3/4 cup), divided
- 3 oz 1/3 less fat cream cheese (about 6 T)
- 3/4 t kosher salt
- 2 cups shredded rotisserie chicken breast (about 10 oz)
- 1/2 cup panko Japanese breadcrumbs
Chicken Casserole

Combine all ingredients except the stuffing in a baking dish
- 2 cups cooked cubed chicken breasts
- 1 can cream of mushroom soup
- 1 can cream of celery soup
- 1 cup frozen peas or cut broccoli
- Pepperidge Farm stuffing, prepared according to package
Crock Pot Coca Cola Roast

- 1 pkg dry onion soup mix
- 1 (12 oz) can coke
- Red potatoes, halved
