Easy Oven Roasted Chicken

Preheat oven to 400. Rinse chicken and pat dry with paper towel
- 1 broiler/fryer chicken (3-4 lbs)
- 1 medium potato sliced into 1/2 inch cubes
- 1 medium onion sliced into 8 wedges
- 2 medium carrots peeled and sliced into 1/2 inch pieces
- 1 garlic clove, minced
- 1 T olive oil
- 1/2 t dried thyme leaves
- 1/2 t dried rosemary
- Salt and ground black pepper to taste
- 1/2 cup water
Spinach and Tortellini Soup

- 1 cup milk
- 1 can diced tomatoes with basil, oregano, and garlic
- 2 cups chicken broth
- 4 oz prepared cheese tortellini (Buitoni brand)
- 2 oz fresh spinach, stems removed, and chopped
- 1/4 t red pepper flakes
- 1/4 t garlic powder
Double Layer Chocolate Pie

Mix cream cheese, milk and sugar in large bowl with wire whisk until smooth
- 4 oz cream cheese softened
- 1 T milk
- 1 T sugar
- 1 tub (8 oz) cool whip, thawed
- 1 prepared chocolate flavor crumb crust
- 2 cups cold milk
- 2 pkg (4 serving size) jello chocolate flavor instant pudding and pie filling
Green Bean Casserole with Mushroom Sauce

To blanch the beans: cook in boiling water for 2 minutes then immediately transfer to an ice bath to cool
- 12 oz blanched green beans
- 2 T canola oil
- 3 cups fresh sliced mushrooms
- 1/2 cup chopped onion
- 1 T flour
- 1 cup unsalted chicken stock
- 2 T heavy cream
- 1/2 t black pepper
- 3/8 t kosher salt
- 1/4 cup whole wheat panko
- 3 T grated parmesan cheese
Chicken and Orzo Skillet Dinner

Pound chicken breast with a mallet to about 1/2 inch thickness between 2 sheets of waxed paper
- Seasoned Flour:
- 2 boneless skinless chicken breasts
- 2 T butter
- 1 cup orzo
- 2 cups water
- 2 pouches Swanson flavor boost (OR 2 cups very rick chicken stock - omit water if using stock)
- 2 T dehydrated onion
- 2 strips cooked bacon, diced
- 2 cups broccoli florets
- 1/2 c flour
- 1 t salt
- 1/2 t pepper
- 1 t garlic pepper
- pinch curry powder
Mini Meatloaves

Heat oven to 425 Brush muffin tin with olive oil or spray with nonstick spray
- Topping:
- 2 T olive oil
- 1.5 lbs ground beef
- 1 small yellow onion, diced
- 1 small red bell pepper, diced
- 1 t garlic powder
- 1 egg, beaten
- 1 cup seasoned bread crumbs
- 1 t salt
- 1/2 t pepper
- 2 T Worcestershire sauce
- 1/2 cup ketchup
- 1/4 cup brown sugar
- dash Worcestershire sauce
- 1/2 cup shredded cheddar cheese
Chicken Salad Cups

In a food processor, pulse the chicken, celery and apple SEPARATELY until chopped
- 2 cups cooked chicken (can use store-bought rotisserie)
- 3 celery stalks
- 1 apple, cored
- 1/4 cup sliced almonds
- 1/2 cup red grapes, quartered
- 3 T mayonnaise
- Salt
- Pepper
- Boston lettuce leaves
Pesto Chicken Salad in mini peppers

1. To make pepper shells, cut off on third of peppers lengthwise, leaving stems on shell portion
- 20 mini sweet peppers (1-2 inches long)
- 1 cup chopped cooked cubed chicken
- 2 T onion, finely chopped
- 2 T yellow or red sweet pepper, finely chopped
- 3 T purchased basil pesto
- 2 T mayo
- 1/8 t pepper
Ree Drummond's Chili

Place the ground beef and garlic in a large pot
- 2 lb ground beef
- 2 cloves garlic, chopped
- 8 oz can tomato sauce
- 2 T chili powder
- 1 t ground cumin
- 1 t ground oregano
- 1 t salt
- 1/4 t cayenne pepper
- 1/4 cup masa harina
- 15 oz can kidney beans, drained and rinsed
- 15 oz can pinto beans, drained and rinsed
- Shredded cheddar, tortilla chips, chopped onions for serving

- 1 t lower sodium Worcestershire sauce

- 1 t kosher salt, divided
- 1/4 cup unsalted butter, divided
- 1 lb peeled and deveined medium raw shrimp
- 1/2 cup parmeasn cheese, grated and divided
- 2 1/2 T half and half
- 3 T thinly sliced scallions
- 1/2 t hot sauce
