- 1 T olive oil
- 3/4 cup cubed carrot
- 1/2 cup chopped yellow onion
- 2 t fresh minced garlic
- 3/4 t crushed red pepper
- 6 cups unsalted chicken stock
- 1/2 cup uncooked whole wheat orzo
- 3 large eggs
- 1/4 cup fresh lemon juice
- 3 cups shredded rotisserie chicken
- 3 cups chopped baby spinach
- 1 1/4 t kosher salt
- 1/2 t black pepper
- 3 T chopped fresh dill

Grasshopper Pie

CRUST: Reserve 2 T crumbs for the top
- CRUST:
- 1 1/2 cups chocolate wafer crumbs
- 1/4 c melted butter
- (Can substitute chocolate Oreo premade crust)
- FILLING:
- 28 large marshmallows, halved
- 2/3 cup half and half cream
- 1 cup heavy cream, whipped
- 4 T green creme de menthe
- 4 T white creme de cacao
Peach Blackberry Buckle

Preheat oven to 350 Spray a 9 inch springform pan with baking spray
- 2 cups flour
- 2 t baking powder
- 1/2 t kosher salt
- 1/2 t cardamom
- 8 T unsalted butter, room temperature
- 3/4 cup sugar
- 1 large egg, room temperature
- 1 t vanilla extract
- 1/2 cup milk
- 2-3 peaches, sliced (peeled or unpeeled)
- 1 pint blackberries
- Powdered sugar for dusting
Chicken Lasagna

Preheat oven to 350 Cook noodles, drain and set aside
- 1 1/2 pounds cooked cup up chicken
- 8 oz spiral noodles
- 1/2 cup butter
- 1/2 t pepper
- 1/2 t salt
- 1 t basil
- 1/2 cup flour
- 4 cups chicken broth
- 1 egg
- 1 16 oz carton cottage cheese
- 2 cups Italian blend shredded cheese
- 3/4 cup parmesan cheesse

- 2 stalks celery, chopped
- 1 cup red onion, chopped
- 1 small can white corn
- 2 small cans jalapeno peppers, chopped
- 1/2 cup oil
- 1/2 cup cider vinegar
- 1 t pepper
- 1 t salt
- 1/4 cup sugar
- parsley
- 4 cloves garlic, minced
Peach Blueberry Slump

In a large bowl, combine peaches, berries, sugar, salt, corn starch, lemon juice, and water
- FILLING:
- 6 medium peaches, peeled and sliced
- 1 pint blueberries
- 1/2 cup sugar
- Pinch of salt
- 1 T corn starch
- 1 t cardamom
- 1 T fresh squeezed lemon juice
- 1/4 cup water
- TOPPING:
- 1 cup flour
- 2 T sugar
- 1/2 t kosher salt
- 1 t baking powder
- 1/2 t baking soda
- 4 T unsalted butter, cubed and chilled
- 1/2 cup buttermilk
Spiced Chickpea "Nuts"

Preheat oven to 450 and position rack in upper third of the oven
- 1 15 oz can chick peas, rinsed
- 1 T extra virgin olive oil
- 2 t ground cumin
- 1 t dried marjoram
- 1/4 t ground allspice
- 1/4 t salt
