White Pizza Dip

Preheat oven to 400 Lina a baking sheet with foil and place tomatoes on top
- 1 pint grape tomatoes, sliced in half
- 1 t olive oil
- 1/4 t salt
- 1/4 t pepper
- 12 oz cream cheese, softened
- 8 oz mozzarella cheese, freshly grated
- 8 oz provolone cheese, freshly grated
- 1/4 cup finely grated parmesan cheese
- 4 cloves garlic, minced
- 1/4 cup chopped fresh basil
- 2 T fresh chopped thyme leaves
- 1/2 T freshly chopped oregano leaves
- Crackers, bread, or chips for serving
Winter Red Sangria

In a large carafe, combine the wine, triple sec, brandy, lemon juice, and simple syrup
- 2 (750 ml) bottles red wine
- 4 oz triple sec
- 3 oz brandy
- 2 oz fresh lemon juice
- 1/2 cup simple syrup*
- 1 large granny smith apple, cored and sliced
- 2 medium pears, cored and sliced
- 1 1/2 cups fresh cranberries
- 1 pomegranate, seeds removed
- Cinnamon sticks for garnish
- Rosemary sprigs for garnish
- Simple syrup can be made by bringing equal parts sugar and water to a boil over medium heat until a syrup consistency is reached
Jimmy Buffet's Margarita

Rim a margarita glass with salt (optional) Combine ingredients in a shaker filled with ice
- 1 1 1 oz Margaritaville Tequila Gold
- 1/2 1/2 1/2 oz Margaritaville Tequila Silver
- 1/2 1/2 1/2 oz triple sec
- 1/2 1/2 1/2 oz orange curacao
- 1/2 1/2 1/2 oz lime juice
- 2 2 2 lime wedges
- ice
Green Beans with Goat Cheese and Warm Bacon Dressing

Cook the beans in a large pot of boiling water until tender crisp, about 5 min Drain Cook the bacon and transfer
- 1 lb green beans, trimmed
- 1/2 lb smoked bacon, chopped (about 6-8 slices)
- 1/2 cup chopped shallots (about 3)
- 2 garlic cloves, chopped
- 1/4 cup sherry wine vinegar
- 3 T dijon mustard
- 1 t dry mustard
- 1/2 cup extra virgin olive oil
- 1 cup crumbled goat cheese
- 1/2 cup dried sweetened cranberries
- Kosher salt and freshly ground black pepper
Grilled Shrimp Skewers with Spinach, Feta and Walnut Pesto

Toss shrimp with garlic, oregano, red pepper, and a few T olive oil
- Pesto Sauce:
- 1 lb large raw, peeled, and deveined shrimp
- 2 large cloves garlic, peeled and minced
- 2 t dried oregano
- pinch red pepper flakes
- 2-3 T olive oil
- 4 cups loosely packed spinach
- 1/2 cup crumbled feta
- 1/2 cup walnut halves (or 1/3 cup chopped walnuts)
- juice of 1/2 lemon
- 1 clove garlic
- olive oil as needed (approx 1/3 cup)
Grilled Tilapia with Peach Salsa

This recipe works with any thick-flesh fish including cod, halibut, swordfish or turbot
- 4 tilapia fillets
- Kosher salt
- Lemon pepper
- 2 T olive oil
- 2 cups peaches, chopped
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 2 T freshly chopped cliantro
- 2 T freshly chopped mint
- 2 T fresh-squeezed lime juice
- 1 T honey
- Pinch red pepper flakes (optional)
- Lemon wedges for garnish
Chicken Salad

Boil chicken breasts until tender
- 4 skinless boneless chicken breasts
- 1 small pkg chopped walnuts
- 1/2 cup Craisins
- 1 stalk celery, diced
- Mayonnaise
- Salt
- Pepper
Easy Chicken and Vegetables

Combine all ingredients in a pot
- 2-3 pieces boneless, skinless chicken breast
- 1 small bag baby carrots, sliced
- 1 onion, chopped
- 1 bay leaf
- 1 sprig of thyme
- 1 sprig of rosemary
- parsley for garnish
Salmon with Balsamic Honey Glaze

Combine the first six ingredients in a small saucepan, Bring to a boil
- 1/2 cup balsamic vinegar
- 2 T white wine or chicken broth
- 2 T Dijon mustard
- 2 T honey
- 5 garlic cloves, minced
- 1 T olive oil
- 8 salmon fillets
- 1/2 t salt
- 1/2 t pepper
- 1 T minced fresh oregano
Clam Ball

Mix all together then roll in chopped cashews
- 10 1/2 oz minced clams (canned)
- 8 oz cream cheese
- 1 T minced onion
- 1/4 t garlic salt
- 1 T lemon juice
- Cashews, chopped for topping
