Fermented Pickle Recipe

How to Make 2% Brine: Dissolve 1 tablespoon fine sea salt in 4 cups non-chlorinated water
- Small Small pickling cucumbers*
- 1-2 1-2 1-2 cloves garlic
- 1 1 1 tablespoon mustard seed
- 10 10 10 peppercorns
- 1 1 1 bay leaf
- 1-2 1-2 1 heads of fresh dill (or 1 tablespoon dill seed, if you prefer)
- to 2% and water to make 2% brine solution (instructions below)
Chicken Liver Pate

Melt butter over med heat
- 1 T Butter
- 1 Clove Garlic, Chopped
- 1 T chopped onion
- 1/4 lb. chicken livers trimmed and chopped
- 2 T dry sherry
- 1/3 of 8 0z of cream cheese, softened
- hot sauce to taste
- salt and pepper
Traditional Chilaquiles

Preheat oven to 375 degrees F (190 degrees C)
- +8 fresh tomatillos, husks removed
- +1 white onion, coarsely chopped
- +1 poblano pepper, peeled and seeded
- +1 jalapeno pepper, seeded
- +3/4 cup chopped cilantro
- +4 cloves garlic
- +2 leaves fresh mint
- +salt to taste
- +3 cups shredded cooked chicken
- +1/4 cup vegetable oil
- +12 (6 inch) white corn tortillas, cut into 3 strips
- +3/4 cup shredded pepperjack cheese
- +3/4 cup shredded Monterey Jack cheese

- 1/4 c unsweetened cocoa powder

- 1 cup chopped onion
- 1 teaspoon bottled minced ginger

- 3/4 cup milk
- 1/4 cup barbecue sauce
- 2 eggs
- 2 tablespoons barbecue sauce
