Chiptole Beef Jerky

Cut the beef into thin strips about a 1/8th inch/1/4 centimeter thick and 1 inch wide (length is not critical)
- 2 1/2 pounds/1 kilogram beef, eye of the round or lean round, all fat trimmed away
- 3/4 ounce/20 grams kosher salt (about 1 1/2 tablespoons)
- 1 3/4 teaspoons/10 milliliters garlic powder
- 1 3/4 teaspoons/10 milliliters onion powder
- 2 –4 teaspoons ground chipotles
Venison Lo Mein

1 Rinse the cooked spaghetti noodles thoroughly and toss in sesame oil (careful, a little goes a long ways)
- 8 ounces regular spaghetti noodles cooked according to package directions
- Sesame oil (begin with a small amount)
- 2 tablespoons canola oil
- 1 pound beef steak (like chuck), sliced thinly (easier to slice if partially frozen)
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 2 tablespoon minced fresh ginger
- 3 cloves garlic, minced
- 4 green onions, sliced white and green parts divided
- 2 large carrots, julienned
- 2 stalks celery, thinly sliced
- 3/4 cups bean sprouts
- 1 can water chestnuts
- 1 can bamboo shoots
Copycat Chipotle’s Corn Salsa

Start by lining a cookie sheet with tinfoil and then set the oven to broil
- 16 ounces white sweet corn, fresh or frozen and defrosted
- 1 large poblano pepper + 1 teaspoon high heat oil
- 1 small red onion (approx. 3/4 cup)
- 1 jalapeno pepper
- 1/2 cup fresh cilantro
- juice of 2 limes + 1 lemon (approx. 1/2 cup)
