- 2 oz. orange juice
- 1 oz. lemon juice
- 1/2 oz. grenadine syrup
- 5 oz ginger ale
Beachcomber's Punch

Blend ingredients in blender for no more than 5 seconds
- Garnish:
- 1 1/2 oz. Demerara rum
- 1/2 oz. apricot brandy
- 1/2 oz. lime juice
- 1/2 oz. white grapefruit juice
- 1/2 oz. simple syrup
- 6 drops (1/8 teaspoon) Pernod
- Dash Angostura bitters
- 3/4 cup crushed ice
- Mint sprig
Cilantro-Cucumber Quinoa Salad

Combine the quinoa and 1 1/2 cups of water in a 2-quart saucepan over high heat
- 3/4 cup quinoa, washed, strained, and rinsed twice
- 1/3 cup roughly chopped cilantro
- 1 small cucumber, peeled, seeded, and diced
- Juice of 1/2 lime (about 3/4 oz.)
- 1 teaspoon extra-virgin olive oil
- Coarse salt
- Ground black pepper

Pour the cranberry juice, pineapple juice and lemon juice into a cocktail shaker half-filled with ice cubes
- Garnish:
- 4 oz. cranberry juice
- 2 oz. pineapple juice
- 1/2 oz. lemon juice
- 2 oz. club soda
- Lemon wedge
- Maraschino cherry
Mango Fizz

Pour mango juice into an ice-filled rocks glass and add lime juice
- Garnish:
- 4 oz. mango juice
- 1 tsp. lime juice
- Club soda (to top)
- Lime wheel or fresh mango chunks
Stuffed Poblano Peppers with Salsa Verde

Preheat oven to 475 degrees
- Filling:
- 4 large poblano peppers
- 2 teaspoons plus 1 tablespoon vegetable oil
- 2 large tomatillos
- 1 garlic clove
- Coarse salt and ground pepper
- 1/2 cup fresh cilantro leaves, roughly chopped, plus more for garnish
- 8 ounces small mushrooms, such as white button or cremini, trimmed and quartered
- 1 cup frozen corn kernels
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup prepared brown rice
- 1 cup crumbled fresh goat cheese (4 ounces)
Canton Grapefruit

- Garnish:
- 4 oz. fresh red grapefruit juice
- 1/4 oz. lemon juice
- 1/4 oz. lime juice
- 1/2 oz. Sonoma ginger syrup
- 3 oz. club soda

- lime slice
- maraschino cherry
Colonel Beach's Plantation Punch

Shake everything but ginger beer with crushed ice
- Garnish:
- 2 oz. dark Jamaican rum
- 1 oz. gold Puerto Rican rum
- 1/2 oz. gold Barbados rum
- 1/2 oz. falernum
- 1 oz. lime juice
- 2 oz. unsweetened pineapple juice
- Dash Angostura bitters
- 6 drops (1/8 teaspoon) Pernod
- 2 oz. ginger beer, chilled
- Fresh pineapple chunk
- Mint sprig
