- Compote:
- 3 tablespoons olive oil
- 1/2 cup chopped dried Mission figs
- 1/4 cup light-brown sugar
- 1/2 teaspoon fresh thyme leaves, plus more for garnish (optional)
- Coarse salt
- 5 ounces goat cheese (1 small log)
- Chips:
- 2 large russet (baking) potatoes
- 2 tablespoons unsalted butter, melted
- 1 tablespoon fresh thyme leaves

- 8-10 mint leaves
- 1 Demerara Sugar Cube

Combine panko, turkey, egg, water chestnuts, salt, chopped cilantro, soy sauce and sesame oil to panko mixture
- Marinade:
- 1/2 cup panko bread crumbs
- 2 pounds ground turkey
- 1 large egg, lightly beaten
- 1/2 cup canned sliced water chestnuts, rinsed, drained, and finely chopped
- 6 tablespoons chopped fresh cilantro
- 1/4 minced scallions
- 1 clove garlic, crushed
- 1/2 teaspoon salt
- 1 tablespoon soy sauce
- 4 tablespoons soy sauce
- 2 teaspoons Asian sesame oil
- 2 tablespoons fresh lime juice
