- 1 small clove garlic
- Salt
- 4 tsp. butter

Beet-Ginger Chutney

Heat oil in a large, deep saute pan over high heat
- 2 tablespoons olive oil
- 4 shallots , finely chopped
- 4 cloves garlic , minced
- 2 (3-inch) pieces ginger , peeled and sliced
- 4 beets (about 2 pounds), peeled and cut into 1/2-inch cubes
- 2 tablespoons honey
- 4 white or green cardamom pods
- 2 sprigs thyme
- 2 tablespoons sugar
- 1 tablespoon unsalted butter
- 2 cups chicken stock or broth
- 1/4 teaspoon salt , or to taste

In a small mixing bowl, whisk together vinegar, mustard, shallots, salt, and pepper

- 1 T Dijon mustard
- 1 T chopped shallots

- 1/4 tsp. freshly ground black pepper
- 3 to 4 cups grapeseed oil for frying
- 1 cup rice flour (all-purpose flour may be substituted)
- 1 Tbsp. kosher salt
