Roasted Turkey

1. About 5 hrs before serving time, remove giblets & neck from inside turkey cavity
- 12 lb turkey (preferably organic & free-range)
- 1 c herb butter (see separate recipe)
- 4 c store bought stuffing, made according to package instructions
- Salt & pepper
- 2 carrots, sliced
- 1 onion, sliced
- 4 stalks celery, sliced
- 2 c stock
- Garnish: 2 oranges, sliced, & 1 bunch dandelion greens
Olive-Lemon Relish

1. In a med bowl gently toss together all ingredients, including the reserved lemon juice
- 1/2 c pitted olives, chopped Picholine olives or other green brine-cured olives
- 1 lemon, preferably Meyer, peeled, segmented, and chopped; juice squeezed & reserved
- 2 T EVOO
- 2 T chopped fresh parsley
- 1 small shallot, finely chopped
- 1/2 t honey, plus more to taste if using a regular lemon
- 1/2 t white wine vinegar, preferably chardonnay
- 1/4 t kosher salt, plus more to taste
- Freshly ground black pepper
Seared Salmon with Green Bean Salad and Balsamic Vinaigrette Recipe

In a medium bowl, whisk together vinegar, shallots, and 1/4 cup oil, then season to taste with salt and pepper
- 2 Tbsp. balsamic vinegar
- 2 Tbsp. finely chopped shallots
- 1/4 cup plus 1 Tbsp. extra-virgin olive oil, divided
- Kosher salt
- Ground black pepper
- 4 skinless salmon fillets (6 ounces each)
- 1/2 pound green beans, trimmed
- 6 ounces cherry tomatoes, quartered
- 4 radishes, very thinly sliced
Plum and Pecan Pancakes

In a medium bowl, toss the plum slices with 1 1/2 tablespoons sugar and set aside
- 3 plums, thinly sliced
- 4-1/2 tablespoons sugar
- 2 cups flour
- 1-1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups buttermilk
- 2 large eggs
- 1/4 cup butter, melted, plus more for greasing
- 3/4 cup pecans, coarsely chopped Maple syrup, warmed, for serving

1. Let dough stand @ room temperature, covered w/plastic wrap for 30-45 min or until completely thawed
- 1/3 (48oz) package frozen pizza dough
- 3 T yellow cornmeal
- 1 T EVOO
- 1 T minced garlic
- 1/2 t salt
- 1 (10oz) container refrigerated Alfredo sauce
- 1 (10oz) pckg frozen chopped spinach, thawed, drained, & squeezed dry
- 1/2 lb lump crabmeat, drained
- 2 c (8oz) shredded Muenster cheese

- 2 1/2 Tbsp. extra-virgin olive oil , plus more for peppers

- 3 large red bell peppers
