Cream Cheese Coffee Cake

Topping: Adjust oven rack to middle position and heat oven to 350F
- Lemon Sugar-Almond Topping
- 1/4 cup sugar
- 1 1/2 tsp finely grated zest from 1 lemon
- 1/2 cup sliced almonds
- Cake
- 2 1/4 cups unbleached all-purpose flour
- 1 1/8 tsp baking powder
- 1 1/8 tsp baking soda
- 1 tsp salt
- 10 tbsp (1 stick + 2 tbsp) unsalted butter, softened but still cool
- 1 cup plus 7 tbsp sugar
- 1 tbsp finely grated zest plus 4 tsp juice from 1 to 2 lemons
- 4 large eggs
- 5 tsp vanilla extract
- 1 1/4 cups sour cream
- 8 oz cream cheese, softened
Tuscan Cheese Potato Bake

1. Preheat oven to 400 degrees F
- 2 pounds red potatoes
- 3 - 4 cloves garlic, minced
- 1 1/2 teaspoons snipped fresh thyme or 1/2 tsp. dried thyme, crushed
- 1/4 cup butter
- 1 cup buttermilk
- 4 ounces fontina cheese, shredded (1 cup)
- 4 ounces Parmesan cheese, finely shredded (1 cup)
- 1/3 cup crumbled blue cheese
- 1/2 cup panko (Japanese-style bread crumbs)
- 1/4 teaspoon dried Italian seasoning, crushed
- 1 tablespoon olive oil
- Snipped fresh parsley (optional)
Vegetable Loaded Mac n Cheese

Directions Preheat the oven to 350 degrees
- 3 cups broccoli, florets, cut small or zucchini, sliced or a combination of the two
- 1 lb pasta -- elbow, penne or your favorite shape
- 1 cup cheddar or gouda cheese, grated
- 1 cup mozzarella, cheese, shredded
- 1 cup Parmesan cheese, grated
- 3 cups milk
- 1 cup breadcrumbs
- 3 tbs butter

Preparation Heat a Dutch oven over medium-high heat
- Cooking spray
- 1 1/2 cups prechopped green bell pepper
- 1 cup chopped green onions, divided (about 1 bunch)
- 2 cups frozen corn kernels
- 1 1/4 cups water
- 1 teaspoon seafood seasoning (such as Old Bay)
- 3/4 teaspoon dried thyme leaves
- 1/8 teaspoon ground red pepper
- 1 pound baking potatoes, cut into 1/2-inch pieces

Hearty Chipotle Chicken Soup recipe

- 1 large onion, chopped
- 1 tablespoon canola oil
- 4 garlic cloves, minced
- 4 cups reduced-sodium chicken broth
- 2 cans (15 ounces each) pinto beans, rinsed and drained
- 2 cans (14-1/2 ounces each) fire-roasted diced tomatoes, undrained
- 3 cups frozen corn
- 2 chipotle peppers in adobo sauce, seeded and minced
- 2 teaspoons adobo sauce
- 1 teaspoon ground cumin
- 1/4 teaspoon pepper
- 2 cups cubed cooked chicken breast
- 1/2 cup fat-free sour cream
- 1/4 cup minced fresh cilantro

- 1 cup sugar
- 4 egg yolks
- 1/2 cup butter (1 stick)
- 10 ounces fresh or frozen grated coconut, thawed
- 1 1/2 cups nuts (pecans, walnuts or almonds), finely chopped
- 1 teaspoon vanilla extract
Orzo with Everything Salad

Cook orzo in pot of boiling salted water until just tender but still firm to bite
- 1 1/2 cups orzo (rice-shaped pasta; about 10 ounces)
- 1/3 cup (packed) chopped drained oil-packed sun-dried tomatoes
- 5 tablespoons extra-virgin olive oil
- 1/4 cup balsamic vinegar
- 1/4 cup (packed) chopped Kalamata olives or other brine-cured black olives
- 1 cup finely chopped radicchio (about 1 small head)
- 1/2 cup pine nuts, toasted
- 1/2 cup chopped fresh basil
- 1/2 cup freshly grated Parmesan cheese
- 2 large garlic cloves, minced
Spaghetti Squash AuGratin

Cut the spaghetti squash in half and remove the seeds
- 1 medium spaghetti squash
- 2 tablespoons butter
- 1 small yellow onion, cut in half and very thinly sliced
- 1/4 teaspoon red pepper flakes, or more if you like it spicy
- 1 teaspoon fresh thyme
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
