GUILT-FREE COOKIE(oatmeal)

Bake at 350 for 15-20 minutes
- 3 mashed bananas (ripe)
- 1/3 cup apple sauce
- 2 cups oats
- 1/4 cup almond milk
- 1/2 cup raisins (optional)
- 1 tsp vanilla
- 1 tsp cinnamon
Jalapeno Spinach Dip Recipe

1. In a 1-1/2-qt. slow cooker, combine the first 10 ingredients
- 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
- 2 packages (8 ounces each) cream cheese, softened
- 1 cup grated Parmesan cheese
- 1 cup half-and-half cream
- 1/2 cup finely chopped onion
- 1/4 cup chopped seeded jalapeno peppers
- 2 teaspoons Worcestershire sauce
- 2 teaspoons hot pepper sauce
- 1 teaspoon garlic powder
- 1 teaspoon dill weed
- Tortilla chips
- 1 . In a 1-1/2-qt. slow cooker, combine the first 10 ingredients. Cover and cook on low for 2-3 hours or until heated through. Serve with chips. Yield: 16 servings (1/4 cup each).
Tomato Spinach dip

In a small bowl, beat the cream cheese, milk, salt and cayenne until smooth
- PITA TRIANGLES (IF MAKING):
- 1 package (8 ounces) cream cheese, softened
- 1/3 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 2 medium tomatoes, seeded and chopped
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- 1 small onion, finely chopped
- 1 tablespoon butter, melted
- 1 tablespoon olive oil
- 6 whole pita breads
- 1 teaspoon ground cumin
- 1 teaspoon lemon-pepper seasoning
Cucumber Salad Recipe

Whisk together sour cream, vinegar, lemon juice and sugar until smooth
- 2 cucumbers, sliced
- 1 large onion sliced and separated into rings
- 1 small red bell pepper, seeded and sliced into rings
- 1-pint sour cream (can use low fat or fat free)
- 4 tablespoons vinegar
- 2 tablespoons lemon juice
- 3/4 cup sugar
Roasted Garlic Pasta Salad

Using a sharp knife, cut approximately ½ inch off the top of the head of garlic
- 1 head garlic
- 1/2 Tbsp olive oil
- 1 lb. whole wheat pasta shells
- 15 oz. ricotta cheese
- 1/4 cup grated parmesan
- to taste salt & pepper
- 1 pint cherry tomatoes
- 3 cups baby spinach
Chick-n-Broccoli Pot Pies

Heat oven to 375°F. Separate dough into 10 biscuits
- 1 can (12 oz) Pillsbury® Grands!® Jr. Golden Layers® refrigerated biscuits
- 2/3 cup shredded Cheddar or American cheese
- 2/3 cup crisp rice cereal
- 2 cups frozen broccoli cuts, thawed
- 1 cup cubed Quorn chick tenders
- 1 can (10 3/4 oz) reduced-sodium condensed cream of mushroom soup
- 1/3 cup slivered or sliced almonds

One-Pot Pasta with Tomato-Basil Sauce

1. Place first 9 ingredients and, if desired, dried crushed red pepper in a Dutch oven in order of ingredient list
- 12 ounces casarecce or fusilli pasta (use whole wheat)
- 1 (28-oz.) can diced tomatoes
- 2 cups chicken broth (or no-chicken broth)
- 1/2 medium-size yellow onion, sliced
- 4 garlic cloves, sliced
- 1 teaspoon dried oregano
- 1/3 cup firmly packed fresh basil leaves
- 2 teaspoons kosher salt
- 1 tablespoon olive oil
- 1/4 teaspoon dried crushed red pepper (optional)
- 1 (6-oz.) package baby spinach
- Freshly grated Parmesan cheese
Lasagna Soup

It tastes like lasagna, but takes half the time
- 1 lb. ground beef (or veggie crumbles or mushrooms)
- 1/2 cup diced yellow onion (1 medium)
- 1 green or red bell pepper, seeded and diced
- 4 garlic cloves, pressed or minced
- 3 cups chicken broth (or No-chicken broth)
- 1 - 14.5 oz. can diced tomatoes
- 1 - 15 oz. can tomato sauce
- 4 cups baby spinach (optional)
- 1 tsp Italian mix seasoning
- 1 tsp salt
- 1/4 tsp ground pepper
- 1 tsp garlic salt (or 1/2 tsp granulated or roasted garlic)
- 1/4 tsp crushed red pepper flakes
- 1 tsp California basil
- 1 cup small noodles
- 3/4 cup grated Parmesan cheese
- 1 1/2 cup shredded Mozzarella cheese
Green Rice
