Shrimp with Gin

Have ALL the ingredients ready
- 1/2 lb. shrimp in shells
- 1 tbsp. olive oil
- 2 tsp. salt
- 3 cloves garlic, sliced
- 1 tsp. fresh grated ginger
- 2 tbsp. grated onion
- 1 tbsp. soy sauce
- 2 tbsp. gin

Reheat the stock; taste for strength ~ if not strong enough, boil down till taste is correct

- to to to rich homemade chicken stock, the canned stuff is like brown salted water! It's very easy to make ~ and you'll love having the cooked chicken meat around for munching.

Hungarian Mushroom Soup

1.Melt the butter in a large pot over medium heat
- 4 tablespoons unsalted butter
- 2 cups chopped onions
- 1 pound fresh mushrooms, sliced
- 2 teaspoons dried dill weed
- 1 tablespoon paprika
- 1 tablespoon soy sauce
- 2 cups chicken broth
- 1 cup milk
- 3 tablespoons all-purpose flour
- 1 teaspoon salt
- ground black pepper to taste
- 2 teaspoons lemon juice
- 1/4 cup chopped fresh parsley
- 1/2 cup sour cream

Chop bacon. Set aside. Cook onions in drippings over medium high heat 'til transparent

- 8 slices of Bacon fried crisp, retain drippings
- 1 c. diced yellow onion
- 2/3 c. flour
- 6 c. chicken broth
- 4 c. diced peeled baked potato
- 2 c. heavy cream
- 1/4 c. chopped fresh parsley
- 1 1/2 t. granulated garlic
- 1 1/2 t. dried basil
- 1 1/2 t. Tabasco
- 1 1/2 t. coarse black pepper
- 1 c. grated cheddar cheese

Delicious Hamburger Soup

Soak beans in 10 cups of water overnight
- 1 cup dry white beans
- 1 pound lean ground beef
- 1 cup chopped onion
- 1 cup diced carrots
- 1 1/2 cups diced potatoes
- 3/4 cup diced celery
- 3 cups canned tomatoes or juice
- 2 cups frozen peas
- 1 cup macaroni, rice, barley OR fine egg noodles
- 1 1/2 TBSP beef bouillon granuals
- 1 TBSP Worcestershire sauce
- 1/8 TSP cayenne pepper
- 10 cups water
- 2 TBSP sugar
- 1/2 TBSP salt or to taste
- 1/2 TSP pepper
- 1/2 TSP basil
- 1/2 TSP parsley
Shrimp Toast

Mix shrimp, water chestnuts with beaten egg, corn starch, sherry, salt and pepper
- 1/2 pound uncooked shrimp, peeled, deveined and 5 waterchestnuts or celery, minced
- 1 teaspoon ginger root, finely minced
- 1 egg, lightly beaten
- 1 1/2 teaspoons cornstarch
- 1 teaspoon sherry
- 1/2 teaspoon salt
- dash pepper
- 4 slices white bread
- oil for deep frying

- 1/2 pound navy beans
- Ham bone and any leftover ham
- 1 medium onion, chopped and sauteed
- 3/4 cup shredded raw potatoes
- 3/4 cup chopped celery
- 1/4 cup celery leaves
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup fresh green onion tops
- 1 cup chopped tomato (fresh or canned)

Heat oil and saute onions, celery, green pepper and garlic until onions are translucent, but don't brown
- 2 tablespoons olive oil
- 1/2 red onion, chopped
- 1/2 cup celery, chopped
- 1/2 cup green pepper
- 2 cloves minced garlic
- 4 cups chicken stock
- 3 cups cooked shredded chicken
- 1 can 28 ounce can crushed tomatoes
- 2 whole jalepeno peppers, chopped (jar or can)
- 3 tablespoons fresh lime juice (I use bottled)
- 1 teaspoon dried cilantro (or 1/4 cup fresh)
