Easy Gazpacho

Roughly chop the cucumbers, bell peppers, tomatoes, and red onions into 1-inch cubes
- 1 hothouse cucumber, halved and seeded, but not peeled
- 2 red bell peppers, cored and seeded
- 4 plum tomatoes
- 1 red onion
- 3 garlic cloves, minced
- 23 ounces tomato juice (3 cups)
- 1/4 cup white wine vinegar
- 1/4 cup good olive oil
- 1/2 tablespoon kosher salt
- 1 teaspoons freshly ground black pepper
Bruschetta with Tomatoes, Cucumbers, and Basil

1. In a large bowl, combine tomatoes, onion, cucumber, and basil; season lightly with salt and pepper
- 3 large, ripe tomatoes, seeded and chopped
- 1/2 large red onion, cut into 1/4-inch dice
- 1 cucumber, peeled, seeded, and cut into 1/4-inch dice
- 1 cup fresh basil leaves, shredded
- Coarse salt and freshly ground pepper
- 1/4 cup extra-virgin olive oil, plus more for brushing
- 1 tablespoon red-wine vinegar
- 1 baguette
- 2 to 3 peeled garlic cloves, for rubbing
Gazpacho

Combine all ingredients (cept for the lime and croutons) in a blender or food processor fitted with metal blade
- Relish:
- 3 pounds tomatoes -- peeled, seeded and
- -- chopped
- 1/2 pound cucumber -- peeled, seeded and
- -- chopped
- 1 cup celery -- chopped
- 1/2 cup red bell pepper, chopped
- 1/2 cup red onion -- chopped
- 1 teaspoon garlic -- chopped
- 1 tablespoon jalepeno pepper -- chopped
- 3 tablespoons red wine vinegar
- 1/4 cup olive oil -- best quality
- 12 ounces tomato juice
- salt, pepper, ground coriander
- 1 lime
- croutons
- 2 tablespoons EACH - small diced red bell pepper, cucumber, red onion and tomato
- 1 teaspoon minced garlic
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- salt and pepper
Sedona White Corn Tortilla Soup

- 3 tablespoons olive oil
- 1 1/2 seven inch corn tortillas, cut into 1 inch squares
- 1 1/2 tablespoons minced fresh garlic
- 2 tablespoons minced white onion
- 1 1/2 teaspoons minced jalapeno pepper
- 1 pound white corn kernels
- 1 1/2 pounds chopped ripe red tomatoes
- 1/3 cup tomato paste
- 2 1/2 teaspoons ground cumin
- 1 tablespoon kosher salt
- 1/8 teaspoon ground white pepper
- 1/2 teaspoon chili powder
- 1 1/2 cups water
- 1 quart chicken stock (preferably homemade)
- 24 blue corn torilla chips (optional garnish)
- 2 cups shredded sharp cheddar (optional garnish)
- 1/2 cup chopped fresh cilantro (optional garnish)
Scallop Puffs Que Sara

Melt butter in medium skillet over medium high heat
- 3 tablespoons unsalted butter
- 1 pound bay scallops, quartered
- 2 teaspoons lemon zest, finely minced
- 3 clove garlic, minced
- 3 tablespoons dill, chopped
- 2 cups Swiss cheese, grated
- 2 1/4 cups mayonnaise
- ground pepper, to taste
- 12 dozen bread rounds, 1 inch in diameter, lightly toasted
- sweet hungarian paprika
- lemon slices and dill springs for garnish
Ghiradelli Brownies

- 2 eggs
- 1 teaspoon vanilla
- 3/4 cup Ghiradelli Sweet Ground Chocolate
- 1/2 cup melted butter
- 2/3 cup unsifted flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup chopped walnuts
- 3/4 cup sugar
