Pre-heat oven to 325 degrees
- 2 cups low-fat graham cracker crumbs
- 2 tablespoons butter
- 16 ounces non-fat cream cheese
- 1 cup non-fat yogurt (drained)
- Stevia equivalent to1 cup sugar
- 1/4 cup cornstarch
- 1 tablespoon fresh lemon juice
- 2 egg whites
- 1 large egg
- 3 cups fresh blueberries (for topping)
Sausage, Cheese and Veggie Bake

Preheat the oven to 375°F
- 7 oz (2 links) sweet Italian chicken sausage, removed from skin
- olive oil spray
- 1 3/4 cups part skim mozzarella, shredded (for gf, check labels)
- 1 tbsp olive oil
- 1/3 cup chopped shallots
- 5 oz sliced shiitake mushrooms
- 1 cup chopped roasted red bell peppers (from a 12 oz jar)
- 1 1/2 cups finely chopped broccoli florets
- 8 large whole eggs
- 4 large egg whites
- 1/4 cup fat free milk
- 2 tbsp grated parmesan cheese
- 1/2 tsp kosher salt
- 1/4 tsp ground black pepper
Carrot and Zucchini Bars

1. Preheat oven to 350 degrees and lightly spray a 9×13 pan with nonstick spray
- 2 eggs
- 3/4 C brown sugar
- 1/2 C canola oil
- 1/4 C honey
- 1 tsp vanilla
- 1 1/2 C shredded carrot (about 2 large carrots)
- 1 C shredded zucchini (about 2 small zucchinis)
- 1/2 C chopped pecans (optional) **I sprinkled them on top of the frosting instead of adding them to the bars
- 1 1/2 C flour
- 1 tsp baking powder
- 1/2 tsp ground ginger
- 1/4 tsp baking soda
- 1/4 tsp salt
- Frosting
- 8 ounces reduced fat cream cheese, room temperature
- 1 C powdered sugar
- zest of one lemon
- pinch of salt
HONEY LIME GARLIC BUTTER SALMON

- 1/3 cup butter
- 1/4 cup honey
- 4 large cloves garlic, crushed
- 2 limes, juiced
- 1.2 kg | 2 1/2 pound side of salmon

- 2 (20 ounce) bags frozen cauliflower
- 1/4 cup sour cream
- 1/4 cup plain yogurt
- 1 tablespoon salted butter, softened
- 1 cup shredded Cheddar cheese, divided
- 2 tablespoons bacon bits or crumbled bacon
- 1 tablespoon chopped fresh chives
- 1 teaspoon minced garlic
- 1/2 teaspoon black pepper

1. Combine chicken broth, onion, garlic and zucchini in a large pot over medium heat and bring to a boil
- 1/2 small onion, quartered
