Chocolate Chip Cheese Ball

In a mixing bowl, beat the cream cheese, butter and vanilla until fluffy
- 1 8oz pkg Cream Cheese
- 1/2 c Butter - softened
- 1/4 t Vanilla Extract
- 3/4 c Confectioners Sugar
- 2 T Brown Sugar
- 3/4 c miniature semi-sweet Chocolate Chips
- 3/4 c finely chopped pecans
- Graham Crackers (Chocolate is great)
Potato Casserole

Preheat oven to 300. Butter a shallow baking dish
- 2 lbs Potatoes
- 1/2 c Sour Cream
- 8 oz Sharp Cheddar - cut down
- 6-8 Green Onions - thinly sliced
- 1/4 c Milk
- 1 T Flour
- Salt & Pepper to taste
- 1/3 c Butter Bread Crumbs
Bean Salsa

Mix all ingredients together in a bowl
- 1 can Black Eyes Peas
- 1 can Black Beans
- 1 can Shoe Peg Corn
- 1 cup Celery (3 stalks) - chopped
- 1 Green Pepper - chopped
- 1 c Red/Purple Onion - chopped
- 1 c Oil
- 1/2 c Sugar
- 1/2 c Vinegar
- Jalapeños
- Cilantro
Steak Fajitas

STEAK MARINADE: Combine the ingredients for the marinade in a large shallow bowl
- STEAK MARINADE:
- 1/3 cup lime juice
- 1/4 cup pineapple juice (no sugar added)
- 2 tablespoons Worcestershire sauce
- 3 tablespoons olive oil
- 1 tablespoon minced garlic
- 2 teaspoon EACH: ground cumin AND chili powder (or more to taste)
- 1 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes (or more to taste)
- 1 teaspoon salt and 1/2 teaspoon black pepper
- 1/4 cup chopped cilantro
- FAJITAS:
- 1 1/2 – 2 pounds skirt or flank steak
- 1 tablespoon oil (high heat)
- 2 medium white onions, sliced
- 1 large poblano, ribs and seeds removed then sliced
- 2-3 bell peppers (any color you please!)
Broccoli Cauliflower Casserole

Mix soup and milk together
- Fresh Broccoli
- Fresh Cauliflower
- 2 cans of Cream of Mushroom
- 1 c Milk
- 1 can Durkee French Fried Onions
- 1 lb Velveeta Cheese - thinly sliced
Sugar Cookies

Cream the butter. Add the sugar (cream well)
- 1 c Butter (2 sticks)
- 1/2 cup sugar
- 1 Egg
- 1 t Vanilla
- 2 1/4 c Flour
- 1/4 t Salt
Marinaded Chuck Roast

Cook 6" from heat - Sprinkle both sides of roast with meat tenderizer - poke
- 1/3 c Wine Vinegar
- 2 T Soy Sauce
- 1/4 c Ketchup
- 2 T Oil
- 1 T Worcestershire Sauce
- 1 t Mustard
- 1 t Salt
- 1/4 t Pepper
- 1/4 t Garlic Powder
- 3 3/4 - 4 lb Roast
Butterscotch Delight

Crust Mix margarine/butter (1 stick), nuts and flour together and press into a 9x13 pan
- 1 1/2 stick Margarine or Butter - softened, divided
- 1/2 c Nuts - chopped
- 1 c Flour
- 2 boxes Butterscotch Pudding
- 3 1/2 c Milk
- 1 (8oz) pkg Cream Cheese - room temperature
- 1 c Powered or Confectionary Sugar
- 1 tub (13oz) Cool Whip - thawed
- Toasted Coconut
Crockpot Creamed Corn

Place corn into a slow cooker
- 3 (15.25-ounces) cans whole kernel corn, drained
- 1 cup milk
- 1 tablespoon sugar
- 1/4 teaspoon pepper
- 8 ounces cream cheese, cubed
- 1/2 cup (1 stick) unsalted butter, cut into thin slices
Hash brown Potato Casserole

Bake for 1 hour at 350
- 2 lbs Hash Browns or Hash Browns O'Brien
- 1 lb Velvet Cheese
- 1 can Cream of Chicken
- 1 pint Sour Cream
- 1 T Minced Onion
