Coconut Chicken with Sweet Chili Dipping Sauce

- Ingredients:
- 2 lbs. boneless, skinless chicken breasts
- 2 large eggs
- 1/4 cup coconut milk (optional)
- 1/2 cup all purpose flour
- 1 cup panko bread crumbs
- 1 cup shredded coconut
- 1/2 tsp salt
- 1/2 cup vegetable oil, divided
- 1 cup sweet chili sauce
Cucumber, Black Bean, Avocado, Corn & Tomato Salad

- 1 English cucumber, diced
- 1 can black beans, rinsed
- 1 1/4 cups corn
- 1 red pepper, diced
- 1 cup cherry tomatoes (I used half red, half yellow)
- 1/2 cup packed fresh cilantro, chopped
- 1 lime
- 1 avocado, diced
- Salt and pepper, to taste
Five Minute Avocado Cilantro Dressing

Instructions Pulse all ingredients in a food processor or blender until smooth
- half an avocado
- 1/4 cup Greek yogurt
- 1/2 cup water (more as needed to adjust consistency)
- 1 cup cilantro leaves and stems
- 1 small clove of garlic
- 1/2 teaspoon salt
- a squeeze of lime juice
Skillet Chicken with Creamy Cilantro Lime Sauce

Preheat oven to 375°F (190°C)
- 4 skinless boneless chicken breasts
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon olive oil
- 1 cup chicken broth (I recommend reduced sodium)
- 1 tablespoon fresh lime juice (I use closer to 1.5 Tbsp)
- 1/4 cup finely chopped onion
- 1 tablespoon chopped cilantro
- 1/2 teaspoon red pepper flakes1
- 3 tablespoons heavy cream2
- 2 tablespoons unsalted butter, cubed
- Optional: lime wedges and more cilantro for garnish, steamed asparagus for serving
Perfect Pot Roast (Slow-Cooker)

Place roast into crockpot and surround with vegetables
- 2 lbs beef roast
- 4 potatoes, peeled and cut into 1-inch cubes
- 1 1⁄2 cups baby carrots
- 1 large onion, quartered and pulled apart
- 1 1⁄2 cups beef broth
- 1 (1 1/2 ounce) envelope dry vegetable soup mix (I use Knorr)
Veggie Lovers' Pasta Salad

1.Cook the pasta in a large stockpot of generously-salted water al dente according to package directions
- 12 ounces dry pasta (I used farfalle)
- 2-3 tablespoons olive oil
- 1 zucchini, cut into bite-sized pieces
- 3 cups chopped broccoli florets (about 1 small head of broccoli)
- 2 bell peppers, cored and diced into bite-sized pieces (I used 1 yellow and 1 orange bell pepper)
- 1 cup cherry or grape tomatoes, halved
- 3 cloves garlic, peeled and minced
- salt and pepper
- half a small red onion, peeled and thinly-sliced
- 1/2 cup white balsamic vinaigrette (or any favorite balsamic or Italian dressing)
- optional topping: grated Parmesan cheese
