Easy Chicken Parmesan

Preheat oven to 350 degrees
- 2 c. gemalli pasta (cook and drain with cold water and set aside)
- jar (16-24 oz) spaghetti sauce
- shredded Parmesan cheese
- chicken tenders (not breaded)
- shredded Mozzarella cheese
- fresh sliced mushrooms
- can of artichoke hears (in water), if desired. Drain before using.
- 1/4 c. merlot
Smooth Sweet Tea

Sprinkle a pinch of baking soda into a 64-ounce, heat-proof, glass pitcher
- 1 pinch baking soda
- 2 cups boiling water
- 6 tea bags
- 3/4 cup white sugar
- 6 cups cool water
Amazing Apple Cake

Mix and beat first 10 ingredients for 2 minutes
- 3 c. flour
- 2 c. sugar
- 1 c. mayonaise
- 1/3 c. milk
- 2 eggs
- 2 t. baking soda
- 1-1/2 t. cinnamon
- 1/2 t. cloves
- 1/2 t. nutmeg
- 1/2 t. salt
- 3 c. chopped and peeled apples
- 1 c. raisins
- 1/2 c. nuts (walnuts or pecans)
7-Up Jello

Mix together the first three ingredients
- 1 small red or green Jello
- 1 cup hot water
- 1/2 cup cold 7-Up
- 4 oz. Cool Whip
Summer Squash Soup

In a large saucepan, saute squash and onions in butter until tender
- 5 small yellow summer squash, seeded and cubed
- 2 green onions, cut into 3-inch pieces
- 2 T. butter
- 1 can (14-1/2 oz) chicken broth
- 1/2 t. salt
- 1/8 - 1/4 t. white pepper
- 1-1/2 c. heavy whipping cream
Custard Pie

Beat egg yolks slightly. Add sugar, salt, cream and vanilla and stir well
- 6 egg yolks
- 1/2 c. sugar
- 1/4 t. salt
- 2 c. light cream (don't substitute or custard will not set)
- 1 t. vanilla (or 1 T. rum)
- nutmeg
Curried Cashew, Pear and Grape Salad

In a large, dry skillet over medium-high heat, toast cashews until golden brown, about 5 minutes
- Dressing:
- 3/4 cup cashew halves
- 4 slices bacon, coarsely chopped
- 1 tablespoon melted butter
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon curry powder
- 1 tablespoon brown sugar
- 1/2 teaspoon kosher salt
- 1/2 teaspoon cayenne pepper
- 3 tablespoons white wine vinegar
- 3 tablespoons Dijon mustard
- 2 tablespoons honey
- 1/2 cup olive oil
- salt and black pepper to taste
- Salad:
- 1 (10 ounce) package mixed salad greens
- 1/2 medium Bosc pear, thinly sliced
- 1/2 cup halved seedless red grapes
Glazed Apple Dumplings

Make pastry and form into a ball
- Pastry for 2-crust pie
- 6 medium baking apples
- 6 T. sugar
- 1/2 t. nutmeg
- 6 T. soft butter or margarine
- 2 c. light brown sugar, firmly packed
German Potato Salad

Fry bacon until brown. Add onion and saute
- 9 slices bacon, diced
- 1 c. onion, chopped
- 6 T. flour
- 2/3 c. brown sugar
- 2 T. salt
- 1/2 t. pepper
- 1/3 c. cider vinegar
- 3 c. water
- 8 medium or 5-6 large cooked and sliced potatoes
Banana Punch

In a blender, blend the water, sugar and bananas until smooth
- 3 cups of warm water
- 2 cups sugar
- 3 ripe bananas, sliced
- 46 ounces pineapple juice
- 1-1/2 cup orange juice
- 1/4 cup lemon juice
- 3 quarts of ginger ale, chilled (equals 8 cans)
