Quinoa Pilaf

First made 8/9/2011. Very good and easy
- 1 T. unsalted butter
- 1 large shallot, peeled and chopped
- 8 baby carrots or 1 large carrot, peeled if needed, chopped
- 1 rib celery, trimmed and chopped
- 1 cup quinoa
- 1 can (14.5 ounces) vegetable broth
- 1/4 tsp fresh thyme leaves or ground spice
- 1/8 tsp salt

- 1-1/2 cups uncooked elbow macaroni
- 3 cups fresh broccoli florets
- 2 cups fresh cauliflowerets
- 3 large carrots, halved and thinly sliced
- 2 celery ribs, sliced
- 1 medium onion, chopped
- 1 tablespoon butter
- 1/4 cup all-purpose flour
- 1 cup 2% milk
- 1 cup chicken broth
- 3 cups (12 ounces) shredded sharp cheddar cheese
- 1 tablespoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 teaspoon paprika
Fruit Pizza

Delicious and easy. Always a hit during barbecue season
- Pastry Dough:
- 1-1/2 cups flour
- 3 T. chilled shortening
- 1 stick chilled butter cut into 2 inch pieces.
- 1/3 cup ice water
- 1/4 tsp. salt
- 2 T. sugar
- Filling:
- 8 ounces of cream cheese
- 1/3 cup sugar
- 1 tsp. vanilla
- Toppings:
- Strawberries, kiwi, blueberries, mandarin oranges, raspberries or any fruit you choose.
- Glaze:
- 1/2 cup peach or apricot jam
- 2 T. hot water
Confetti Kielbasa Skillet Recipe

4/5/2018 Great and easy I have used Italian sausage instead of kielbasa
- 1 T. canola oil
- 7 ounces smoked turkey kielbasa, cut into 1/4 inch slices ( can use regular kielbasa or substitute Italian sausage cut into pieces)
- 1 medium onion, halved and sliced
- 1/2 cup sliced baby portobello mushrooms
- 2 garlic cloves, minced
- 1/2 cup reduced-sodium chicken broth
- 3/4 tsp. Mrs. Dash Garlic & Herb seasoning blend
- 1 can (15 ounces) no-salt-added black beans, rinsed and drained
- 1 package (8.8 ounces) ready-to-serve brown rice
- 1 cup frozen corn or fresh corn if in season
- 1/2 cup chopped roasted sweet red peppers
- 4 tsp. minced minced fresh cilantro (optional)

Sauce: In a bowl stir together the honey and mustard, cover and set aside
- Sauce:
- 1/4 cup honey
- 3 T. dijon mustard
- Chicken Fingers:
- 12 ounces skinless, boneless, chicken breast halves
- 1 egg slightly beaten
- 1 T honey
- 1 tsp prepared mustard
- 2 cups cornflakes, finely crushed
- Dash of black pepper

- 2 cups prepared marinara sauce (I used the Bove's marinara sauce)
- 1 large egg
- 2 T. water
- 2/3 cups dry bread crumbs
- 1/3 grated parmesan cheese
- 6-8 boneless chicken breast halves, about 2 pounds
- 1/4 cup olive or vegetable oil
- 2 cups shredded mozzarella cheese (8 ounces)

- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- 1 cup plain whole-milk yogurt
- 1 1/3 cups sugar, divided
- 3 extra-large eggs
- 2 teaspoons grated lemon zest (2 lemons)
- 1/2 teaspoon pure vanilla extract
- 1/2 cup vegetable oil
- 1/3 cup freshly squeezed lemon juice
- 1 cup confectioners' sugar
- 2 tablespoons freshly squeezed lemon juice

Preheat oven to 375°. In a large bowl, cream butter and sugar until light and fluffy
- FROSTING:
- 1/2 cup butter, softened
- 1-1/2 cups sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1-1/2 cups all-purpose flour
- 1/2 cup baking cocoa
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup buttermilk
- 1/2 cup water
- 1/2 cup butter, softened
- 3-3/4 cups confectioners' sugar
- 2 ounces unsweetened chocolate, melted
- 2 tablespoons evaporated milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- Chocolate sprinkles
Salami Roll-Ups Recipe

1. In a small bowl, combine the cream cheese, salami and pickle relish
- 1 carton (8 ounces) whipped cream cheese
- 1/4 pound hard salami, finely chopped
- 2 tablespoons dill pickle relish
- 4 flour tortillas (10 inches), room temperature
- 1 . In a small bowl, combine the cream cheese, salami and pickle relish.
- 2 . Spread over tortillas. Roll up tightly; wrap in plastic wrap. Refrigerate for 15 minutes. Unwrap and cut each tortilla into 1-in. slices. Yield: 3-1/2 dozen.
