Lemon-Garlic Shrimp & Vegetables - Recipe.com

First tried 10/25/2015. Nice flavor, also nice change of vegetables with the shrimp--
- 4 teaspoons extra-virgin olive oil, divided
- 2 large red bell peppers, diced
- 2 pounds asparagus, trimmed and cut into 1-inch lengths
- 2 teaspoons freshly grated lemon zest
- 1/2 teaspoon salt, divided
- 5 cloves garlic, minced
- 1 pound raw shrimp, (26-30 per pound), peeled and deveined
- 1 cup reduced-sodium chicken broth
- 1 teaspoon cornstarch
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh parsley
Pan Seared Boneless Pork Chops with Caper Sauce

- 4-4 oz. boneless center cut pork chops, trimmed
- 3/4 cup white wine
- 24 grape tomatoes, cut in half
- 2 T. capers
- 2 garlic cloves, chopped
- 1 T. Lemon thyme, removed from stem
- 2 T. olive oil
- Fresh ground pepper to taste

- 4 center-cut boneless pork chops (about 4 oz. each) cut into thin strips
- 1/2 cup hoisin sauce
- 1/4 cup orange juice (from 1/2 navel orange)
- 3 tsp. canola oil
- 8 oz. white mushrooms, sliced
- 1/2 napa cabbage, shredded (about 6 cups)
- 2 carrots, peeled and shredded
- 4 scallions, thinly sliced
- 8 6-inch flour tortilla, warmed

- 2 T extra virgin olive oil
- 1/2 cup butter
- 3 cloves garlic, minced
- 1/3 cup dry white wine
- 3/4 tsp. salt, plus more for seasoning
- 1/8 tsp. red pepper flakes
- black pepper, cracked
- 2 pounds large shrimp, peeled and deveined
- 1 cup marinated artichoke hearts, drained
- 1/2 cup fresh basil, chopped
- rice, pasta or crusty bread, for serving
- 1/2 cup Parmesan cheese, grated

Death by Chocolate Cupcakes

For the cupcakes: Preheat the oven to 350F degrees
- 1/2 cup (1 stick or 115g) unsalted butter
- 2 ounces semi-sweet baking chocolate
- 1/2 cup (42g) unsweetened cocoa powder (not Dutch processed)
- 3/4 cup (95g) all-purpose flour* (measured correctly)
- 1/2 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs, at room temperature*
- 1/2 cup (100g) granulated sugar
- 1/4 cup (50g) packed light brown sugar
- 1 teaspoon vanilla extract
- 1/2 cup (120ml) buttermilk*
- 2 and 3/4 cup (330g) confectioners' sugar
- 2/3 cup (80g) unsweetened cocoa powder
- 6 Tablespoons (90g) unsalted butter, softened to room temperature
- 6 Tablespoons (95ml) heavy cream
- 1 teaspoon vanilla extract
- 1/3 cup (60g) semi-sweet chocolate chips for decoration, optional

- 1 lb. chicken breast tenders (can use boneless chicken cut up into small pieces)
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 T. olive oil
- 1 small onion, sliced
- 2 cups baby carrots, sliced
- 2 cups broccoli florets
- 1 T. seedless raspberry jam
- 1 T. white-wine vinegar
- 1 T. water
- 1 T. soy sauce
- 1 tsp. ground ginger
Pina Colada Fruit Salad Recipe

In a serving bowl, combine the first six ingredients
- 1-1/2 cups green grapes
- 1-1/2 cups seedless red grapes
- 1-1/2 cups fresh blueberries
- 1-1/2 cups halved fresh strawberries
- 1 can (8 ounces) pineapple chunks, drained
- 1/2 cup fresh raspberries
- 1 can (10 ounces) frozen non-alcoholic pina colada mix, thawed
- 1/2 cup sugar
- 1/2 cup pineapple-orange juice
- 1/8 teaspoon almond extract
- 1/8 teaspoon coconut extract
