Lighter General Tso's Chicken

First prepared 10-6-08, excellent
- 1-1/4 cups long grain brown rice
- 1/4 cup cornstarch
- 1 pound snow peas trimmed and halved crosswise
- 4 cloves garlic sliced
- 2 tsp. grated fresh ginger
- 3 T. light brown sugar
- 2 T. soy sauce
- 1/2 tsp red pepper flakes-optional
- 2 large egg whites
- 1 pound boneless chicken cut into 1 inch pieces
- 2 T. vegetable oil
- Salt and pepper
Skillet Pork Chops with Zucchini Recipe

In a small bowl, combine the flour, 1/3 cup cheese, salt, dill weed and pepper
- 6 tablespoons all-purpose flour
- 2/3 cup grated Parmesan cheese, divided
- 3 teaspoons salt
- 1 teaspoon dill weed
- 1/2 teaspoon pepper
- 6 boneless pork loin chops (3/4 inches thick and 4 ounces each)
- 1 tablespoon canola oil
- 2 medium onions, sliced
- 1/3 cup warm water
- 3 medium zucchini (about 1 pound), sliced
- 1/2 teaspoon paprika
Broccoli Salad

Cut the bacon into small pieces and cook over medium heat just until crisp; drain on paper towels
- 8 ounces bacon
- Salt
- 5 cups small broccoli florets
- 1 cup mayonnaise
- 1 tablespoon cider vinegar
- 1/3 cup chopped onion
- 1/4 cup sugar
- 3/4 cup raisins
- 1/2 cup sunflower kernels
Cheddar BBQ Meatloaf Muffins

First made 9/25/2013. Excellent and moist
- 2/3 cup milk
- 1/2 cup plain dry breadcrumbs
- 2 pounds meatloaf mix (ground beef, pork and veal)
- 1 1/4 cups shredded Cheddar (about 5 ounces)
- 1/2 cup barbecue sauce
- 1 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 4 small green onions, finely chopped ( about 1/3 cup)
- 2 cloves garlic, minced
- 1 large egg
Temperatures for meats

check meats with a thermometer
- Chicken temperature- 165 degrees
- Turkey temperature-insert thermometer into the thickest part of thigh. It is ready when it hits 155 to 160 F.
- Beef- medium rare- 135 to 140 degrees
- medium- 145 to 155 degrees
- Boneless pork chops 145 degrees for medium rare to 160 degrees for medium.
Honey-Ginger Pork with Carrotts and Apples

First tried 10/29/14. Very good flavor
- 2- 1 lb. pork tenderloins
- Salt and pepper
- 1 T. olive oil
- 1/2 cup apple juice
- 3 T. honey
- 2 tsp. fresh ginger root, grated
- 3 carrotts, cut into 1/4 inch slices
- 1 large or 2 small apples, cored and cut into 1/4 inch slices.(make sure to use a hard apple,ie granny smith or it will turn to mush)
Apple Peanut Butter Cookies Recipe

In a large bowl, cream the shortening, peanut butter and sugars until light and fluffy
- 1/2 cup shortening
- 1/2 cup chunky peanut butter
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1-1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground Spice Islands® Ground Saigon Cinnamon
- 1/2 cup grated peeled apple
White Bean Chicken Chili Recipe

Sprinkle chicken with salt and pepper
- 3/4 pound boneless skinless chicken breasts, cubed
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 medium onion, chopped
- 1 jalapeno pepper, seeded and chopped
- 2 teaspoons dried oregano
- 1 teaspoon ground cumin
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 2 cans (15 ounces each) white kidney or cannellini beans, rinsed and drained, divided
- 3 cups chicken broth, divided
- 1-1/2 cups (6 ounces) shredded cheddar cheese
- Sour cream and minced fresh cilantro, optional
Shrimp Toast Cups

For cups: Cut a 3-inch round from each slice of bread
- 2-3 large loaves white sandwich bread, crusts removed.
- 1 cup melted butter
- 3 T. butter
- 1/4 cup flour
- 1 1/2 cups milk
- 1 cup shredded cheddar cheese
- 8 ounces chopped cooked shrimp
- 1 T. minced green onions
- 1 T. lemon juice
- 2 T. chopped parsley
- 1 tsp. Dijon mustard
- 1/2 tsp. salt
- paprika
Grape Waldorf Salad

Whisk sour cream, brown sugar, lemon juice, celery seed, and seasonings together in a bowl
- Whisk together:
- 1/4 cup sour cream
- 2 T. brown sugar
- 1 tsp. fresh lemon juice
- 1/4 tsp. celery seed
- Salt and pepper to taste.
- Add, Stir in:
- 2 cups red seedless grapes, halved
- 2 cups green seedless grapes, halved
- 1/2 cup celery, diced
- 2 T. chopped fresh parsley
- 1/2 cup pecans, chopped and toasted
