Properly seasoned black beans and red lentils lend tremendous flavor and depth to main-dish salads
- 2 cups Cooked black beans
- 2 cups Cooked red lentils
- 1 tsp Dry mustard
- 3 Tbsp Minced garlic
- 1 Tbsp Fresh parsley, minced
- 1/2 cup Rice vinegar
- Juice from 1 lemon
- 1 tsp Salt
- 3 Tbsp Olive oil
- 1 tsp Crushed red peppers
- 1 small Butterhead lettuce, torn
- 2 large Red bell peppers, sliced
- 2 large Red potatoes, cooked, sliced
- 1/2 cup Grated carrots

1. In a medium saucepan, bring two cups of water to a boil
- Lemon Vinaigrette:
- 4 cups curly kale; hard stems removed and chopped into small pieces
- 2 cups cooked quinoa
- 1/2 cups red grape halves
- 1/2 a red bell pepper; finely chopped
- 1/4 cup raw sunflower seeds
- 1/4 cup organic grapseed oil
- Juice of 1 medium sized lemon
- 1 Tbsp. raw honey; melted to soften
- 2 Tbsp. dijon mustard
- Pink Himalayan salt to taste
