- 1 1/2 pounds all-purpose potatoes, peeled and cut into chunks
- 1 1/4 pounds mixed winter vegetables such as carrots, Brussels sprouts, rutabagas, turnips, onions, leeks or savoy cabbage, peeled or trimmed and chopped into equal-sized chunks
- Olive oil
- 2 knobs butter, divided
- 1 (7-ounce) package vacuum packed chestnuts
- 6 good quality pork sausages, linked together
- 6 good quality venison or beef sausages, linked together
- Sea salt and freshly ground black pepper
- Small bunch fresh rosemary, leaves picked and finely chopped
- Nutmeg, for grating
- 3 red onions, peeled and finely sliced
- Few bay leaves
- 1 tablespoon all-purpose flour

- Dip:
- 2 2 2 bulbs elephant garlic
- 1/2 1/2 1/2 cup grated Asiago cheese
- Kosher salt
- 2 to 3 2 to 3 3 tablespoons extra-virgin olive oil
- Crackers:
- 1/2 1/2 1/2 cup grated Asiago cheese
- 1/2 1/2 1/2 teaspoon cayenne pepper
- 1/2 1/2 1/2 batch Calzone Dough, recipe follows
- All-purpose flour, for dusting
- 1 1 1 egg beaten with 1 tablespoon water, for egg wash
- Special equipment: pasta roller
- Calzone Dough:
- 2 2 2 tablespoons dry yeast
- 1 1 1 teaspoon sugar
- 1 1 1 cup warm water
- 2 2 2 cups high-gluten flour
- 1 1 1 cup semolina flour, plus more for dusting
- 1 1 1 teaspoon kosher salt
- 1/4 1/4 1/4 cup extra-virgin olive oil, plus more for bowl
- 15 a small bowl, combine the yeast and sugar and whisk together with the warm water. Let sit for 15 minutes; when the water looks frothy and smells very yeasty, it's ready.

- (If you prefer not to mix flours, you can use 1 1/2 cups all purpose gluten-free flour blend in place of the fours and starches in the recipe.)
- Cupcakes
- 1/2 cup superfine white rice flour
- 1/3 cup millet flour
- 1/3 cup superfine sweet rice flour
- 1/3 cup tapioca starch
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon kosher or fine sea salt
- 1 teaspoon instant espresso powder
- 1 cup granulated sugar
- 1 cup coconut milk (shake can well before measuring)
- 1/2 cup Vegenaise
- 2 teaspoon pure vanilla extract
- 1/2 teaspoon pure almond extract
- Frosting
- 1 1/2 cups coconut flakes
- 1 cup pecans, chopped
- 4 cups confectioners’ sugar, measured then sifted
- 1/4 teaspoon kosher or fine sea salt
- 1/2 cup refined coconut oil at room temperature
- 2 teaspoons pure vanilla extract
- 1/2 teaspoon pure almond extract
- 4 – 6 tablespoons coconut milk
Moist Zucchini Bran Muffins

- 1 cup all-purpose flour (I sub white whole wheat flour for this)
- 1/2 cup whole wheat flour
- 1/4 cup ground flaxseed or wheat germ
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup canned pure pumpkin
- 2 large eggs, beaten
- 1/2 cup packed brown sugar
- 1/2 cup 1% lowfat milk
- 1/3 cup canola oil (I sub coconut oil)
- 1 teaspoon vanilla
- 1/2 cup mini chocolate chips (I use dark chocolate chips)
Roasted Carrots and Beets

- 1 1/2 pounds carrots, mixed colors if available, peeled
- 1 1/2 pounds beets, different sizes and colors if available
- Sea salt and freshly ground black pepper
- 1 bulb garlic, broken apart, 1/2 the cloves smashed, 1/2 left whole
- Extra-virgin olive oil
- 1 orange, juiced
- A few sprigs fresh thyme, leaves picked
- A few sprigs fresh rosemary, leaves picked
