Mini Carrot Cake Tortes

- FROSTING:
- 2 English Breakfast or other black tea bags
- 1 cup boiling water
- 1-1/2 cups sugar
- 1 cup canola oil
- 4 eggs
- 1/2 cup honey
- 1 tablespoon maple syrup
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon ground cloves
- 2 cups shredded carrots
- 1 cup chopped walnuts
- 1 cup raisins
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup butter, softened
- 1 teaspoon vanilla extract
- 3-3/4 cups confectioners' sugar
- Toasted chopped walnuts, optional
Basque Cabbage, Bean and Vegetable Soup

1. Using fork, mash 1 1/2 cups of the beans in medium bowl
- 2 (15-oz.) cans white beans (such as cannellini, great Northern or navy), drained, rinsed, divided
- 2 teaspoons canola oil
- 1 cup sliced onion
- 1 cup diced carrots
- 1/2 cup diced celery
- 1/3 cup diced prosciutto, Bayonne or Black Forest ham (2 oz.)*
- 4 cups coarsely shredded green cabbage (1/2 medium head)
- 4 garlic cloves, minced
- 5 cups lower-sodium chicken broth
- 1 cup diced peeled red potatoes
- 1 teaspoon herbes de Provence**
- 1/2 teaspoon salt
- 3 slices artisan rye bread or whole wheat bread, lightly toasted, halved
- 1/2 cup shredded Gruyère cheese (2 oz.)
Triple Grilled Cheese With Tomato Soup

Combine the olive oil, onion, garlic, celery, tomatoes, sugar and 1 teaspoon salt in a saucepan
- 1/4 cup extra-virgin olive oil
- 1 medium onion, finely chopped
- 1 clove garlic, chopped
- 1 small inner stalk celery, chopped
- 2 pounds tomatoes, chopped
- 1/2 teaspoon sugar
- Kosher salt and freshly ground pepper
- 1 cup shredded muenster cheese (about 4 ounces)
- 1 cup shredded part-skim mozzarella cheese (about 4 ounces)
- 1/2 cup grated parmesan cheese (about 1 ounce)
- 8 slices thick sandwich bread
- 2 to 3 tablespoons unsalted butter, softened
Oven-Fried Parmesan Chicken Recipe

- 6 tablespoons butter, melted
- 5 tablespoons dry bread crumbs
- 3 tablespoons grated Parmesan cheese

- 4 pounds assorted apples, peeled and chopped
- 2 cups apple cider
- 1 cup packed light brown sugar
- Kosher salt
- 1 tablespoon fresh lemon juice
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- Pinch of ground cloves

- 1/2 cup milk
- 2 tablespoon butter, margarine, or shortening
- 1 beaten eggs
- 1/4 teaspoon salt
- 6 teaspoon sugar
- 2 cups all-purpose flour
- 1 teaspoon + 1 dash active dry yeast
Enchilada Sauce

- 1/4 teaspoon cayenne pepper
- 1 beef, chicken or tomato bouillon cube
- Kosher salt and freshly ground black pepper
- 1 tablespoon all-purpose flour
- 1/2 cup chicken stock
- One 15-ounce can tomato sauce
Flour Tortilla
