Chocolate Fudge Bites

Lightly grease a 6 inch (15 cm) loaf pan, or line with plastic wrap
- 3/4 cup (130 g) chopped good-quality unsweetened chocolate (I used Cocoa Camino); or use unsweetened carob chips for ACD Phase I
- 1 Tbsp (15 ml) coconut oil, preferably organic (USE ONLY with carob option)
- 1/4 cup (60 ml) natural smooth cashew-macadamia butter (I just mixed together half cashew, half macadamia nut butter); or use all-macadamia for ACD Phase I
- 1/8 tsp fine sea salt
- 2 Tbsp (30 ml) yacon syrup, vegetable glycerin, or a combination
- 10-20 drops plain, vanilla, or chocolate stevia liquid, depending on the brand and your desired sweetness level
- 1 tsp (5 ml) pure vanilla extract or vanilla paste
- 1/4 cup (30 g) coarsely chopped walnuts, if desired
Cornflake Cookies

Beat butter and sugar till pale and creamy
- 200 g butter
- 150 g sugar
- 2 eggs
- 300 g all-purpose flour
- 60 g bran or any cereal (coarsely crushed)
- 1 tsp vanilla essense
- 30 g corn flour/corn starch
Oh-so Vegetarian Juicy Lucy

•Blend the tofu and potatoes together in a food processor and blender until well combined
- Tofu Burger
- •1 package extra-firm tofu
- •1 small (or enough to make up 1 small) potato -- we used purple fingerlings, kept the skins on
- •1/2 cup whole wheat flour
- •3 tablespoons nutritional yeast
- •1/4 cup sesame seeds
- •2 tablespoons soy sauce
- •1 teaspoon curry powder
- •1 teaspoon cumin powder
- •1 teaspoon garlic powder
- •Pepper to taste
- •2 squares of cheese -- your choice -- the place in the center of patties
- Assembling
- •Two buns (or we used mini sourdough rounds)
- •1 large avocado
- •Grainy mustard
- •Sweet potato fries
- •Sliced cheese (Stephen used Swiss and I used some hot sauce specialty kind. Whatever you love will work.)
Ponzu Tuna Salad

Mix everything well, serve on a roll, bed of greens, sliced bread, whatever
- 1 5 oz can of tuna, drained
- 2 tbls minced shallot
- 3 tbls diced red pepper
- 2 tbls mayonnaise
- 1 tsp ponzu sauce
- pinch of red pepper flakes
- black pepper to taste
- salt, if needed
Mini Angel Food Cake

I decided to use the recipe for a regular size angel food cake, but only made 3/4 of the recipe to be used in (4) 2...
- 3/4 cup of cake flour sifted
- 3/4 cups, plus 2 tbsp of sugar
- 8 egg whites (equivalent to 1 cups)
- 1 tsp of vanilla extract
- 1/2 tsp cream of tartar
- A pinch of salt
Whole Wheat Bread

Measure flour and vital wheat gluten into a medium bowl and whisk together with a fork
- 3-3/4 cup whole wheat flour
- 1/4 cup vital wheat gluten
- 1-3/4 cups warm water (about 105 F)
- 2 teaspoons active dry yeast
- 3 tablespoons olive oil
- 3 tablespoons molasses
- 1-1/2 teaspoons salt
Salmon Cakes

Form into patties and sear in a hot skillet with sesame oil or vegetable oil
- 3 cloves crushed garlic
- 1 T soy sauce
- 1 T chopped fresh cilantro
- 2 finely chopped green onions
- 3/4 cup panko
- 1 egg, beaten
Strawberry Lemonade Macarons

Let the egg whites come to room temperature, uncovered, overnight
- 140 grams egg whites
- 3 grams egg white powder
- 80 grams sugar
- 180 grams almond flour
- 240 grams powdered sugar
- 2 grams salt
- 8 grams dehydrated strawberry powder
- 2 drops red gel food coloring
- lemon curd
- 1 stick butter
- 5 egg yolks, lightly beaten
- 3/4 cup lemon juice
- 3/4 cup sugar
- 3 tablespoons lemon zest
- 1/2 teaspoon salt
- lemon curd buttercream
- 1 stick unsalted butter, softened
- 3/4 cup lemon curd
- 1 1/4 cup powdered sugar (or more for correct consistency)
Citrus-Sesame Scallops on Soba

1.Using immersion blender or food processor, blend tangerine juice through jalapeno and taste
- •12 large Dry Scallops, fresh (see above for prep instructions)
- •2 Tbsp sesame oil
- •1 bundle buckwheat soba noodles
- •3 green onions, sliced diagonally
- •1 large carrot, julienned (we use on like this)
- •1/4 head of purple cabbage sliced
- •1/2 cup Napa cabbage, sliced

- 1 ½ cups + 2 ½ tablespoons (225g) all purpose flour, sifted
