Apple-Strawberry Pie Cake with Dried Fruits

Pre-heat oven at 170 C. In a small bowl mix the dried fruit with apple juice and half a vanilla bean, seeds scrape...
- 4 oz of dried fruit of your choice. (I used raisins, dried apricots, crystallised ginger and dried cranberries)
- 1 cup of apple juice (as suggested by Lola)
- 3/4 cup of all purpose flour
- 1/4 cup whole wheat flour
- 1/2 tsp baking powder
- 4 medium apples
- 8 strawberries (optional)
- 3 eggs
- pinch of salt
- 1/2 cup light brown sugar
- 6 Tbsp unsalted butter melted
- 2 Tbsp oil
- Pinch of cinnamon
- 1/2 cup of chopped walnuts divided in half
- Cooking spray or little butter to grease the spring form pan
Spinach & Artichoke Hummus

In the food processor, combine all the ingredients except the sun dried tomatoes and puree until smooth
- 1 15-ounce can chickpeas, drained and rinsed
- 2 tablespoons tahini
- 2 garlic cloves
- Zest of 1 lemon
- Juice of 1 lemon
- Salt and freshly ground black pepper to taste
- 1/4 cup extra-virgin olive oil
- 1/4 (10oz) box chopped frozen spinach, defrosted and drained well
- 1 15-ounce can artichokes, drained and coarsely chopped
- 1/2 to 3/4 cup grated Parmesan cheese
- 1-2 slices sun dried tomatoes, minced
Baked Fish Tacos

BAKED FISH TACOS Pre-heat oven to 500
- FISH TACOS
- 4 Tilapia Fillets sliced into strips
- 1/4 Cup Lime Juice – bottled or fresh
- 1/4 Cup Flour
- 1/3 Cup Cornmeal
- 1 tsp Chipotle Spice – if available or you can substitute Chili Powder
- 1 tsp Kosher Salt
- SOUR CREAM
- 1/4 Cup Low Fat Yogurt
- 1/4 Cup Light Sour Cream
- 1/4 Cup Light Mayo (optional)
- 2 tsp Sugar
- 2 Tbsp Chipotle in Adobo Sauce from can
Maccha Chiffon Cake with Choco Chips

Sieve flour and green tea powder together, set aside
- Ingredients(make one 16cm cake)
- 1 tablespoon green tea powder
- 30 ml milk
- 2 egg yolks
- 20 g caster sugar
- 20 ml vegetable oil
- 40 g self-raising flour
- 2 egg whites
- 1/4 teaspoon cream of tartar
- 50 g caster sugar
- some dark chocolate chips
Farro, Asparagus and Pea Soup

1.Cover the farro with cold water and cook until tender
- 1/2 cup farro
- 3 Tbs olive oil
- 1/2 cup Italian parsley
- 1/8 tsp red pepper flakes
- or up to 1/2 tsp if you like heat
- 4 garlic cloves, choped
- 8 oz new potatoes, peeled and cubed
- 4 oz arugula, stemmed and chopped
- 1 cup peas, removed from pods
- 3 asparagus spears, thinly sliced crosswise
- 4 cups vegetable stock
