Chocolate Salami

Place the butter and chocolate in a large microwave safe bowl
- 200 g bittersweet chocolate, chopped (preferably 70% cacao) (I used Scharffenberger)
- 100 g unsalted butter, in 6 or so pieces
- 2 large egg yolks
- 2 T liquor of choice (I used Starbucks coffee liquor)
- 2 pinches of chile powder/flakes of choice (I used Turkish Maresh flakes, smoky sweet but not too hot)
- 40 g nuts of choice--I used hazelnuts
- 60 g broken up cookies of choice, the lighter they are the more they will mimic the fat in salami--I used traditional Scottish shortbread and chocolate wafers (the second storebought, I confess)--the
- 1 T unsweetened cocoa powder, good quality (I used Scharffenberger)
- 1 T granulated sugar, the finer the better
- 1 t coarse sea salt of choice, good quality (I used coarse French grey sea salt)
- confectioner's sugar for rolling
Mexican Banana Cake

Peel potatoes, wash it and cut into cubes
- 500 g sweet potatoes (about one large)
- 500 g banana (about 3 pieces)
- 500 ml fresh milk
- 3 eggs
- 100 g sugar
- 100 g butter
- 3 tablespoons rum
- 1 vanilla pod
- jar of your favorite jam - the recipe is out of raspberries, I used a home of prunes
Topinambur with Olive Oil

Put the chopped topinamburs in a bowl and squeeze half lemon on it
- 500 g topinambur,chopped
- 2 - 2 carrots, chopped
- 1 - 1 onion, chopped
- - Half lemon
- - Half orange
- 1 - 1 sugar cube
- - Salt to taste
- 3 - 3 tbsp extra virgin oliveoil
- - Celery leaves
- 1/2 -1/2 cup water
Quinoa Salad, Vegetables and Cottage Cheese

Washing cinema and January soaking for 15 minutes in cold water
- For dressing:
- 100 g quinoa
- 300 g broccoli
- 16-18 cherry tomatoes
- 50 grams of red beet seedlings
- boneless handful black olives (to me are Mammoth, because they are my favorites, but you can use any)
- Kotizh cheese
- 5 tablespoons olive oil
- juice of half a lemon
- salt
- you can use spices and optional
Spicy Veggie Quinoa

Cook quinoa in one and a half cups of water in a pot, bringing to a boil over high heat
- 1 cup quinoa, rinsed
- 1 1/2 cups water
- 2 large carrots, cut into wedges
- 2 cups mushrooms, sliced
- 3 tomatoes, sliced
- 1 zucchini, sliced
- 1 red pepper, chopped
- 3 tablespoons olive oil
- salt, to taste
- 1 teaspoon cayenne powder
- 3/4 teaspoon cumin
- a generous drizzle of agave
- a few sprigs of cilantro
Tropical Mahi Mahi

In a shallow dish, combine the juice from 2 of the limes, 4 tablespoons of light coconut milk, and the minced ginge...
- •2 mahi mahi fillets (approximately 6 ounces each)
- •3 limes
- •6 tablespoons light coconut milk
- •1 tablespoon ginger, peeled and minced
- •1/2 green bell pepper, diced (approximately 1/2 cup)
- •1/2 red onion, diced (approximately 1/2 cup)
- •1 mango, diced (approximately 1 cup)
- •1 – 8 ounce can crushed pineapple, drained
- •1 tablespoon fresh mint, chopped
- •Extra virgin olive oil
- •Kosher salt
Walnut Crumble Topped Raspberry Rhubarb Apple Pie

1. Set the oven rack to the lower third and preheat to 375 degrees
- 1 piecrust, store bought or homemade
- 1 1/2 cups granulated sugar
- 1/3 cup all purpose flour
- 1/8 teaspoon salt
- 3 cups chopped fresh or frozen rhubarb
- 3 cups fresh or frozen raspberries
- 1 large Granny Smith apple, peeled and cut into small slices
- 1 teaspoon lemon juice
- Walnut Crumble Topping
- 1/2 cup walnuts
- 1/4 cup dark brown sugar
- 1/2 cup all purpose flour
- A pinch of salt
- 4 tablespoons unsalted butter
- More butter for dotting pie
Fennel and Celery Salad with Pumpkin Seeds

Combine celery, fennel, parsley, and pumpkin seeds in large bowl
- • 3 celery stalks, cut crosswise into paper-thin slices
- • 1 small fennel bulb, trimmed, halved vertically, sliced paper-thin
- • 1/2 cup fresh Italian parsley leaves
- • 1/4 cup toasted salted pumpkin seeds (pepitas)
- • 2 tablespoons olive oil
- • 1 tablespoon fresh lemon juice
- • 3/4 cup Parmesan cheese shavings (about 1 1/2 ounces)
Fudge Ribbon Cake

Heat oven to 350ºF. Spray 10-inch fluted tube pan with flour no-stick cooking spray

- •1 tablespoon cornstarch
- •1 (14 oz.) can Sweetened Condensed Milk

- •1 teaspoon vanilla extract
- Chocolate Ganache (from Cookie Madness)
- •3 oz bittersweet chocolate (I used Ghirardelli Bars)
- •1/3 cup heavy cream
- •1/2 tablespoon corn syrup
- •1/2 tablespoon unsalted butter
Chocolate Almond Biscotti

Preheat oven to 350F. In a mixing bowl, beat together butter and sugar until smoothly blended
- 1/2 cup butter, softened
- 1 1/4 cup sugar
- 2 eggs
- 1 tsp almond extract...i used vanilla
- 2 1/4 cup flour
- 1/4 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- i added a little less than 1/2 tsp cayenne pepper
- 1 cup sliced almonds..i used whole almonds
- 1 cup chocolate chips...i used chocolate bark
- 1 tbsp shortening
