Pasta with Tuna, Pesto and Peppers

Lemon Strawberry Muffins

1. Preheat oven to 375 degrees F (190 degrees C)
- 2 1/2 cups (325 grams) all-purpose flour
- 3/4 cup (150 grams) granulated white sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- Zest and juice of one Meyer Lemon
- 1 large egg, lightly beaten
- 3/4 cup (180 ml) *buttermilk
- 2/3 cup (160 ml) safflower or canola oil
- 1 teaspoon pure vanilla extract
- 2 cups chopped, **fresh strawberries
Salmon Burgers with Cilantro Mayo

In a medium mixing bowl, combine the diced bell pepper, panko, garlic and salmon
- For the cilantro mayo:
- 1/2 cup red bell pepper, diced
- 6 tbsp. panko bread crumbs
- 1 clove garlic, finely minced
- 1 lb. salmon fillets, skinned, boned and finely chopped
- 1 large egg white, lightly beaten
- 11/2 tsp. soy sauce
- 1 tsp. fresh lemon juice
- 1/4 tsp. salt
- 1-2 tbsp. vegetable or canola oil
- 1 clove garlic, chopped
- 1/2 cup mayo
- 1/2 cup cilantro
- Dash of cayenne pepper
- Squeeze of lemon juice
Whole Wheat Pita Bread

Combine yeast, honey, and 1/2 cup warm water in a large bowl
- 1 package (2 1/4 tsp) active dry yeast
- 1 Tbsp honey
- 1 1/4 cups warm water (105–115°F)
- 1 1/2 cups bread flour or high-gluten flour, plus additional for kneading
- 1 1/2 cups whole wheat flour
- 1/4 cup extra-virgin olive oil
- 1 tsp salt
- Cornmeal for sprinkling baking sheets
White Onion Soup

•Cut the onions in half, peel them, and slice them thinly
- 3 medium onions
- 2 Tablespoons olive oil
- 1 heaping teaspoon flour
- 1/2 cup white wine
- salt and pepper
- 2-3 cups chicken stock
- 2 slices bread
- 1/2 cup grated swiss cheese
Mushroom Soup with Chives

1. Rinse mushrooms quickly and drain immediately
- 2 1/2 pounds fresh mushrooms (caps & stems)
- (I used porcini, shitake, button and portobello, but you could use a nice combination of almost anything.)
- 5 tablespoons olive oil (but really, who measures olive oil?)
- 2 garlic gloves, crushed
- 3 large shallots, finely chopped
- 2 tablespoons finely chopped parsley leaves
- 1 quart vegetable broth (water will do, but it won’t be as tasty)
- 1 cup firmly packed pureed cooked white potato
- Salt to taste
- Freshly ground black pepper to taste
Black Bean and Quinoa Salad

- 4 medium tomatillos, papery husks removed, halved
- 3 garlic cloves, peeled but left whole
- 1/2 cup chopped fresh cilantro
- 1/2 tsp salt
- 2 chopped serrano chiles (or less if you’re not into spicy food)
- 1/4 cup water

- 2 cups water
- 1 cup quinoa
- juice of one lime
- 2 cups black beans, rinsed and drained
- 1 large tomato, diced
- 1 avocado, diced
- chopped cilantro, for garnish
Guacamole

-Combine all of the mashed avocados, tomato, onion, garlic, lime juice, salt, and black pepper in a large bowl
- 4 avocados, mashed
- 1 tomato, chopped
- ½ cup onion, chopped (approx. ½ small onion, or ¼ large onion)
- 1 clove garlic, minced
- 1 lime, juiced
- ½ cup cilantro, chopped or torn (optional)
- 1-2 hot peppers of your choice, chopped (optional)
- 2 teaspoons hot pepper flakes or powder of your choice (to taste, optional)
- ¼ teaspoon salt (to taste)
- ground black pepper (to taste)
Panna Cotta & Limencello Gelee

Panna Cotta: Put the gelatin leaves in a bowl of water
- Panna Cotta Recipe:
- thick cream, 500gr.
- sugar, 80gr.
- gelatin, 6 leaves (12 gr)
- Vanilla bean, 1/2 , split lengthwise
- For this Limoncello Gelée, you will need:
- White sparkling wine, 200 ml. ( I used a "blanc des blancs")
- Limoncello, 200 ml.
- Sparkling water, 100 ml.
- Sugar, 80 gr
- Gelatin, 5 leaves.
Chewy Oatmeal Raisin Cookies

- 2/3 cup light brown sugar
