Chicken with Broccoli
By ahree
Begin by drizzling olive oil on the sliced chicken fillets and season with some salt and pepper
- •3 boneless, skinless chicken breasts, sliced in half, horizontally
- •1 box of orecchiette pasta
- •1 head of broccoli, cut into florets
- •1 1/2 cup of heavy whipping cream
- •4 cloves of garlic, minced
- •3 tbsp unsalted butter
- •1 tsp each of dried basil, rosemary
- •1/2 cup of grated Parmesan cheese
- •pinch of red chili flakes
- •salt and pepper to taste
- •olive oil
- •large bowl of ice water
Almost Vegan Chocolate Cake

“Butter”three 8-inch cake pans and line with parchment paper
- 3 cups cake flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup cocoa
- 1/2 cup boiling water
- 1 cup rice/almond/soy milk
- 3/4 cup vegan/dairy free baking margarine
- 3/4 cup coconut oil, at room temperature or a little softened
- 2 1/4 cup sugar
- 1 vanilla bean or 1 Tablespoon vanilla extract
- 4 eggs
Walnut Raisin Honey Nuggets

Combine all ingredients and mix well
- 2 tablespoons raisins
- 2 tablespoons chopped walnuts
- 2 teaspoons flaxseeds
- 2 teaspoons honey
- 3 tablespoons rolled oats, or other high fiber whole grain cereal
- 1 paper cup
- Serves 1
Ginger Orange Custard Squares

Put all the above ingredients in blender except the bisquick
- 1/2 cup sugar (1/2 cup cooking splenda)
- 1 teaspoon vanilla
- 4 eggs
- 2 cups of milk (1 cup whole and 1 cup nonfat)
- 1/2 cup bisquick (i use 1/4 cup whole wheat flour and 1/4 cup almond flour)
- ***i add 1/2 cup lowfat cottage cheese
- and 1 scoop vanilla whey protein powder
- ***for this particular pie i used approx 1/2 Tbsp fresh grated ginger and 1/2 Tbsp orange zest
Shrimp and Chicken Arrabbiata

1. Cut chicken breast into cubes and set aside
- 2 TBS Olive Oil
- 16 Shrimp, peeled and deveined
- 3 Chicken Breast Halves, cut into chunks
- 1/2 of a Red Bell Pepper, cut in thin strips
- 1/2 of an Onion, cut into thin strips
- 1 Garlic Cloves, minced
- 1 can Diced Tomatoes
- 1 tsp Salt
- 1 tsp Black Pepper
- 2 tsp Red Pepper Flakes
- Cooked Quinoa
Choco Cupcakes with Milk Chocolate Frosting

CUPCAKE Preheat the oven to 350 F and line a 12-cupcake pan with paper liners
- Cupcakes:

- 3/4 cup unsweetened cocoa powder
- 1 1/2 cups unbleached all-purpose flour
- 1 1/2 cups sugar
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon baking powder
- 3/4 teaspoon salt
- 2 large eggs
- 3/4 cup warm water
- 3/4 cup buttermilk
- 3 tablespoons canola oil
- 1 1/2 teaspoons pure vanilla extract
- Frosting:
- (adapted from Chocolate Shavings)
- 1 stick of butter, softened
- 1 3/4 cups of confectioners’ sugar
- 3 ounces milk chocolate
- a few tsp milk
Orange Julius

Blend everything in a blender for 30-45 seconds
- 5-6 ice cubes
- 1 cup orange juice
- 1 egg white or powdered equivalent
- 3 tablespoons sugar (or sugar substitute equivalent) – less or more depending on sweetness preference
- *optional* 2 tablespoons of vanilla yogurt
- *optional * 1 tablespoon protein powder
Pineapple, Orange and Banana Smoothie

In a blender, combine all ingredients
- 2 cups fresh pineapple chunks
- 2 bananas, peeled
- 1 orange, peeled
- 1 cup ice
- 1 Tbsp. ground flax seed and/or wheat germ (optional)
White Bread

1. In a Bosch or Kitchen Aid mixer place the hot water, sugar, oil, salt, and 4 C of the flour
- Yield: 5 loaves
- 4 C hot water
- 1/2 C sugar
- 2/3 C oil
- 2 T salt
- 3 T yeast
- 10-12 C white flour
