Fried (Sauteed) Salt Fish

Add oil to pan and heat on medium heat
- 2 Tbsp vegetable or canola oil
- 1 cup sliced onions
- 3 sprigs fresh thyme, leaves removed
- 1 large clove garlic, crushed
- 1 cup diced tomatoes
- Minced hot pepper to taste
- Salt to taste
- 8 oz de-salted salt fish, broken into small pieces or shredded
- 1/4 cup sliced green onions (white and green parts)
