- 3 tablespoons EVOO
- 3 onions, cut into 1/2-inch pieces (about 4 1/2 cups)

- 3 1/4 cups long-grain rice
- 2 1/4 cups chicken broth
- 4 bay leaves
- 16 ounces frozen peas

1)Melt butter in large skillet over medium-high heat
- Filling:
- 2 Tbsp unsalted butter
- 1 large onion,chopped fine
- 2 Lbs (85% lean) ground beef

- 3 Cups low-sodium chicken broth
- 1/4 heavy cream
- 2 Tbsp Worcestershire sauce

- 2 small, firm zucchini (about 1 pound), thinly sliced
