Meals (Slamma Jamma Parmigiana)

Chicken: 1)Lightly pound the chicken breasts to 1/2-inch thickness
- Chicken:
- 4 (5-ounce) boneless, skinless, trimmed chicken breasts
- 1/2 cup kosher salt
- 1/2 cup sugar
- 1 1/2 cups all-purpose flour
- 2 eggs
- 1/4 cup milk
- 1 1/2 cups dried bread crumbs
- 1 1/2 cups panko bread crumbs
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1 teaspoon dried parsley
- 1 teaspoon fine sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 pound fresh mozzarella cheese, sliced
- 1/4 pound Parmigiano-Reggiano, plus extra for garnish, grated
- Olive oil, for frying (about 2 cups)
- 1 pound penne rigate, cooked al dente
- Tomato Sauce, recipe follows
- 1/4 cup minced Italian parsley, for garnish
- Tomato Sauce:
- 2 tablespoons extra-virgin olive oil
- 1 yellow onion, minced
- 4 garlic cloves, crushed
- 6 cups peeled and diced Roma tomatoes
- 1 tablespoon thinly sliced fresh basil leaves
- 1/2 tablespoon chopped fresh oregano leaves
- Salt and freshly ground black pepper

1) Cook pasta according to package directions
- 1 package (16 ounces) penne pasta
- 1 cup chopped sweet red pepper
- 3/4 cup chopped onion
- 1 tablespoon butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 carton (18 ounces) refrigerated fully cooked barbecued shredded pork
- 1 can (14-1/2 ounces) diced tomatoes with mild green chilies, undrained
- 1/2 cup beef broth
- 1 teaspoon ground cumin
- 1 teaspoon pepper
- 1/4 teaspoon salt
- 1-1/4 cups shredded cheddar cheese
- 1/4 cup chopped green onions

- 3 eggs, separated
- One 6-ounce container plain fat-free yogurt
- Grated peel and juice of 1 large lemon
- 3/4 cup sugar
- 1/4 cup flour
- 1/4 teaspoon salt
- 4 ripe bananas, sliced crosswise 1/2 inch thick
- Whipped cream (optional)

- CRUST:
- 1-1/4 cups graham cracker crumbs
- 5 tablespoons butter, melted
- 2 tablespoons sugar
- 1 teaspoon ground ginger
- FILLING:
- 3/4 cup sugar
- 2 tablespoons plus 3/4 teaspoon cornstarch
- 1 tablespoon strawberry gelatin
- 3/4 cup cold water
- 2 cups sliced fresh strawberries, divided
- 1 can (14 ounces) sweetened condensed milk
- 1 package (8 ounces) reduced-fat cream cheese
- 1/4 cup cold 2% milk
- 1 package (3.4 ounces) instant banana cream pudding mix

- 3 bone-in, skin-on chicken thighs (about 1 1/2 pounds), excess fat trimmed
- 2 bone-in, skin-on chicken breasts (about 1 1/2 pounds), halved crosswise
- Salt and pepper
- 2 cups plus 6 tablespoons all-purpose flour
- 3 tablespoons vegetable oil
- 1 onion, chopped
- 2 teaspoons minced fresh thyme
- 7 1/2 cups low-sodium chicken broth
- 2 bay leaves
- 1/4 cup Chopped fresh parsley

- 2 cups flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1 teaspoon coarse salt
- 2 1/3 cups buttermilk
- 2 eggs
- 2 tablespoons butter, melted
- 2 1/2 cups cooked macaroni (1 1/4 cups dried), preferably elbows, drained and cooled
- 1 1/2 cups grated cheddar
- Maple syrup, for serving

- Bag of thick pretzels broken into bite size pieces
- 2 sticks of butter
- 1 Pkg Lipton onion soup mix
- Sprinkle of garlic powder

- 4 boneless skinless chicken breast halves (5 ounces each)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons canola oil
- 4 tomato slices
- 4 slices process Swiss cheese
- 1/4 cup mango chutney
- 3 tablespoons mayonnaise
- 4 kaiser rolls, split and toasted
- 1 cup fresh baby spinach
- 8 slices ready-to-serve fully cooked bacon, warmed

1) Brush the 4 ears of corn, onion, bell pepper and potatoes with oil and sprinkle with salt and pepper
- 8 ears husked corn, 4 ears left whole and kernels cut from remaining ears and the cobs scraped to release juice
- 1 large onion, peeled and sliced very thick
- 1/2 red bell pepper, stemmed and seeded
- 1 pound new potatoes, halved
- 1 1/2 Tbsp olive oil
- Salt and ground black pepper
- 4 slices bacon, chopped
- 1 tsp dried thyme leaves
- 1 quart chicken broth
- 2 Tbsp chopped fresh cilantro, plus extra for garnish

- 1/4 cup all-purpose flour
- 3/4 cup creamy peanut butter
- 4 ounces cream cheese, softened
- 2 1/2 cups confectioners' sugar
- 3 Tbsp milk
- 1 tsp vanilla extract
- 12 miniature peanut butter cups, chopped
