Meals (Jane Fox's Famous Tortilla Soup)

1) Preheat the oven to 375 degrees
- 12 corn tortillas, 6 sliced lengthwise into 1-inch-wide strips and 6 cut into 1 1/2 squares
- Vegetable cooking spray
- Salt and pepper
- 1/4 corn oil
- 1 large yellow onion, chopped
- 2-3 cloves garlic, chopped
- A handful cilantro leaves, coarsely chopped.
- 2 bay leaves
- 2 tablespoons mild to medium chili powder, such as Gephardt's or ground ancho chile powder (about a couple scant palmfuls)
- 1 tablespoon ground cumin (about a palmful)
- 6 cups chicken stock
- 1 15 ounce can diced tomatoes with green chiles
- 2 rotisserie chicken breasts, skin and bones discarded, meat shredded or diced
- 2 avocados
- 2 limes, cut into wedges
- 1 small red onion, finely chopped
- 2 large jalapeno chile peppers, seeded and chopped
- Crumbled queso fresco and sour cream, for topping
Sides (Grilled Corn on the Cob with Dill Butter)

Heat grill to high. Remove corn from water and place on the grill
- 12 ears corn, silks removed, husks left on, and soaked in cold water for 20 minutes
- 1/2 pound unsalted butter, slightly softened
- 1/2 cup chopped fresh dill
- Salt and pepper
Meals (Creamy Mac & Cheese Ham Bake)

1) Preheat oven to 375 degrees F
- 1 7 1/4 ounce package macaroni and cheese dinner mix
- 1 1/2 cups cubed cooked ham or chopped cooked chicken
- 1 1/2 cups shredded cheddar cheese (6 ounces)
- 1 cup cream-style cottage cheese
- 1/2 cup sour cream
- 1/2 cup chopped onion
- 1/4 teaspoon ground black pepper
- 1/4 cup soft bread crumbs
- 1 tablespoon snipped fresh parsley or 1 teaspoon dried parsley flakes (optional)
- 1 tablespoon butter, melted
Sides (Creamed Peas with Bacon)

1) Place the bacon in a large, deep skillet
- 4 slices bacon
- 1 (15 ounce) can peas
- 2 tablespoons all-purpose flour
- salt and pepper to taste
- 1/2 (12 ounce) can evaporated milk
Dips (Bacon)

Cook bacon until crisp. Drain on paper towel lined plate,then finely chop
- 1/2 Lb bacon
- 3 green onion,thinly sliced
- 3 sun dried tomatoes,finely chopped
- 4 Oz cream cheese,softened
- 2/3 Cup ranch dressing

1)Heat oven to 350 degrees
- BREAD:
- 1-1/2 Cups shredded peeled baking apples (2 large)
- 1 Cup packed brown sugar
- 1/2 Cup buttermilk
- 1/2 Cup vegetable oil
- 4 eggs,lightly beaten
- 3 Cups all-purpose flour
- 1/2 cup chopped pecans
- 2 Tsp baking soda
- 2 Tsp ground cinnamon
- 1 Tsp salt
- 1 Tsp ground nutmeg
- GLAZE:
- 2 Tbsp butter
- 1/4 Cup packed brown sugar
- 1 Tbsp milk
- 1/2 Cup powdered sugar,sifted

1) Place chicken in slow cooker
- 4 boneless skinless chicken thighs
- 2 cans (15 ounces each) diced tomatoes, undrained
- 1 can (4 ounces) chopped mid green chiles, drained
- 1/2 to 1 cup chicken broth
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- Salt and black pepper, to taste
- 4 corn tortillas, sliced into 1/4-inch strips
- 2 Tbsp chopped fresh cilantro
- 1/2 cup shredded Monterey Jack cheese
- 1 avocado, peeled, diced and tossed with lime juice to prevent browning
- Lime wedges
Meals (Italian Sausage & Roasted Pepper Panini)

Preheat a panini press on the “sear” setting according to the manufacturer’s instructions
- 1 lb. fresh Italian sausage
- 1 1/2 Tbs. vegetable oil
- 1/2 large yellow onion, thinly sliced
- Kosher salt and freshly ground pepper, to taste
- 2 red bell peppers, roasted, peeled, seeded and julienned
- 4 pieces focaccia bread, each 6 by 3 inches, cut in half horizontally
- 8 oz. fontina cheese, shredded

- 2 4 ounce cans diced green chiles, drained
- 1 cup sour cream or mexican crema
- 1 small yellow onion, grated
- 2 cloves garlic, grated or finely chopped
- A small handful cilantro leaves, chopped, plus whole leaves for topping
- 1 teaspoon ground cumin (about 1/3 palmful)
- vegetable oil or EVOO, for warming tortillas
- 12 corn tortillas
- Thinly sliced jalapeno chile peppers and red onions, for topping
