- 2 bunches of kale
- 3 stalks of celery
- small handful of parsley
- 1 whole green apple
- 2 peeled lemons
- a chunk of ginger (more ginger than you think necessary)
- 5 shakes of cayenne pepper (enough to make you sweat a little!)
Oven-Dried Mashed Sweet Potatoes

Preheat the oven to 400 degrees F
- 2 pounds medium sweet potatoes, scrubbed clean and dried with a kitchen towel
- 1/4 cup heavy cream
- 1 tablespoon unsalted butter, softened, plus 1 stick
- Kosher salt
- 1/4 cup fresh orange juice, plus a few grates orange zest
- 1 tablespoon dry sherry
- 1 tablespoon molasses

- 1 large artichoke
- 1/4 lemon
- high-quality olive oil, to taste
- coarse sea or Kosher salt to taste
- parsley, freshly chopped

Hummous With Caramelized Onions & Garlic Topped With Golden Beets, Toasted Pinenuts, and Greek Yogurt

Hummous is one of those wonderfully earthy, satisfying, delicious foods
- Hummous
- 2 cans organic chickpeas, rinsed and drained (you can also use 1 cup dried but I never leave enough time for all that soaking and cooking)
- 6 tbsp organic olive oil, plus more for caramelizing the onions & garlic
- 3 large garlic cloves, minced or pressed
- 2 large or 3 small yellow onions, chopped
- 1/4 cup fresh lemon juice
- 2 tbsp tahini
- Sea salt and freshly ground black pepper to taste
- Toppings
- 4 large beets, preferably the golden or chioggia varieties
- 2 tbsp pinenuts
- 1/4 cup thick greek yogurt
Momofuku Ramen 2.0

Makes 5 i quart servings of finished soup
- Ramen Broth:
- 1 batch of Ramen Broth 2.0
- 1/4 batch Tare 2.0
- 5-6 g kosher salt
- 5 0z. warm rendered Benton's bacon fat (see the Tare 2.0 recipe)
- 2 oz kombu
- 1 1/2 gallons of water
- 1 1/2 oz. dried shitakes, ground to a powder
- 5 lbs chicken backs and necks
- + the trimmings (roots and whites of 1 bunch of scallions
- Tare 2.0:
- 1 chicken back
- 1/2 c. sake
- 1/2 c. mirin
- 1 c. usukuchi soy
- 1/3 lb Benton's bacon or another very smoky substitute
Dressed Up Irish Coffee

Directions Pour the hot coffee into a mug and add the sugar
- 1 cup hot brewed coffee
- 1 teaspoon light brown sugar
- 1 1/2 ounces Irish cream whiskey
- 1 ounce Irish whiskey
- 1/2 ounce peppermint schnapps
- Whipped Cream, recipe follows, for topping
- Shaved dark chocolate, for garnish, optional
- 1/2 cup heavy whipping cream
- 1 tablespoon confectioners' sugar

- 4 cups South Carolina-style BBQ sauce, such as Carolina Gold
- 4 cups melted butter
- 1 cup Dirty Steve's Original Wing Sauce, recipe follows, or hot sauce, such as Frank's
- 8 tablespoons brown sugar
- 4 tablespoons your favorite BBQ sauce, such as Bull's Eye
- 4 teaspoons black pepper

- (can substitute light olive oil or vegetable oil)

QUINOA + KALE PATTIES

You can use quinoa or any other grain here - brown rice, millet, and/or amaranth would all be delish
- 1 cup quinoa
- 2 cups water
- 4 eggs, whisked
- 1/3 cup Parmesan cheese
- 3 spring onions, sliced thin
- 3 cloves garlic, minced
- 1/2 teaspoon sea salt
- 1 cup steamed kale, chopped
- 1 cup breadcrumbs ( GF friends, be sure to use GF breadcrumbs. See my note at the end of the recipe for making your own.)*
- 1 teaspoon olive oil
- optional toppings: avocado, cilantro, lemon juice, salsa verde, garlic oil

Preheat oven to 350 F In a large bowl cream together the shortening and sugars
- 1/3 cup shortening(don't use butter it's not the same in this recipe)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 eggs
- 1 cup graham flour
- 3/4 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup mashed ripe bananas
- 1 cup or more of chopped walnuts
