Preheat the oven to 350 degrees F
- 1/4 pound (1 stick) unsalted butter
- 1 lemon, zested and juiced
- 1 teaspoon chopped fresh thyme leaves
- 1 fresh turkey (10 to 12 pounds)
- Kosher salt
- Freshly ground black pepper
- 1 large bunch fresh thyme
- 1 whole lemon, halved
- 1 Spanish onion, quartered
- 1 head garlic, halved crosswise
Braised Red Cabbage

Melt butter in a deep saute pan with a cover
- 1 tablespoon butter
- 1 red cabbage, sliced 1/4 inches thick
- Salt and freshly ground black pepper
- 1/2 red onion, sliced
- 2 sweet apples, quartered and sliced thin
- 6 allspice berries, lightly crushed, wrapped in cheesecloth and tied
- 1/3 cup red wine
- 1/3 cup red wine vinegar
- 1/4 cup molasses or cane syrup (the cane syrup is lighter in color)
Insanely Easy Vegetarian Chili

1. Heat oil in a large saucepan over medium heat
- tablespoon * 1 tablespoon vegetable oil
- cup * 1 cup chopped onions
- cup * 3/4 cup chopped carrots
- cloves * 3 cloves garlic, minced
- cup * 1 cup chopped green bell pepper
- cup * 1 cup chopped red bell pepper
- cup * 3/4 cup chopped celery
- tablespoon * 1 tablespoon chili powder
- cups * 1 1/2 cups chopped fresh mushrooms
- can * 1 (28 ounce) can whole peeled tomatoes with liquid, chopped
- can * 1 (19 ounce) can kidney beans with liquid
- can * 1 (11 ounce) can whole kernel corn, undrained
- tablespoon * 1 tablespoon ground cumin
- teaspoons * 1 1/2 teaspoons dried oregano
- teaspoons * 1 1/2 teaspoons dried basil
- * Vegetarian meat crumbles, amount to taste

- 1 1/2 cup French green lentils
- 3 small beets, peeled and diced
- 2 carrots, peeled and diced
- 4 shallots, peeled and halved
- 6 tbsp. olive oil
- 2 sprigs fresh thyme
- salt and pepper to taste
- 3 tbsp. red wine vinegar
- 1/4 cup chopped parsley
Guacamole

I mash garlic and salt to a paste, then add minced shallot (yes shallots!)
- 2 cloves garlic, halved, germs removed
- kosher salt (a solid three fingers full), and more to taste
- 1 shallot, minced
- Juice from 1 to 2 limes
- 3 avocados
- 1 roma tomato, seeded and tiny diced
- 1/4 cup cilantro, roughly chopped
Roasted Beet, Onion, and Orange Salad

Directions Preheat the oven to 400 degrees F
- 1 pound beets, preferably very small ones
- 1 tablespoon extra-virgin olive oil
- Salt and freshly ground pepper
- 20 large pearl onions, about 1/2 pound
- 2 oranges, peeled and cut into wedges
- 2 tablespoons hazelnut oil
- 1 tablespoon coarsely chopped fresh coriander leaves (also known as cilantro) plus extra for garnish
- 1/2 cup freshly squeezed orange juice
- 2 tablespoons hazelnuts, toasted and peeled
- 1-ounce pecorino, optional, grated on medium-sized holes of box grater
White Turkey Chili

- 1 c. medium salsa
- 1 c. frozen corn kernels
- 1 c. water
- 2 14 oz. cans great Northern beans , rinsed and drained.
- 12 oz pepper jack cheese, cubed.

- 2 cups sweetened condensed milk, chilled
- 2 cups heavy whipping cream, chilled
- 1 tablespoon dark rum
- 1 teaspoon banana extract
- 1/2 teaspoon ground cinnamon
- Bananas, sliced, for serving

Sesame Tofu and Snap Peas over Fried Rice (Vegan)
