- 1/2 Tbsp grape seed or avocado oil, plus more for cooking
- 1/2 white onion (~55 g | 3/4 cup), finely diced
- 1 Tbsp (~8 g) each chili powder, cumin powder, and smoked paprika
- 1/2 tsp each sea salt and black pepper, plus more for coating burgers
- 1 Tbsp (12 g) coconut sugar (or sub organic brown or muscovado sugar)
- 1 1/2 cups (227 g) cooked black beans*, well rinsed, drained and patted dry
- 1/3 cup (22 g) panko bread crumbs (if gluten-free, use gluten-free bread crumbs)
- 3-4 Tbsp (51-68 g) vegan BBQ sauce

These mashed potatoes will change your life
- 2 pounds red potatoes, cut into 2 inch pieces (you can peel them but I never do - I love red potato skins in my mashed potatoes!)
- 1/2 cup sour cream (or plain greek yogurt)
- 1/4 cup milk

1. BRING water to a boil in large, deep skillet over medium-high heat
- SERVINGS: 4
- 1/3 c water
- 2 c bite-size broccoli florets
- 1 1/2 Tbsp peanut oil
- 1 sliced medium onion
- 1/2 c chopped scallions
- 2 Tbsp oil
- 2 Tbsp minced garlic
- 1 Tbsp minced fresh ginger
- 1 lb boneless, skinless chicken breasts or thighs cut into 1/2" chunks.
- 2 Tbsp soy sauce
- 1 tsp sugar
- 1/2 c chicken or vegetable stock

Directions: 1. Combine all ingredients in a large bowl
- 4 cups white beans already cooked & drained
- 1 cucumber, seeded and chopped however you like
- 1 red bell pepper, chopped however you like
- 1 scallion, green part and bulb chopped however you like
- 200 g canned tuna, drained and fluffed with a fork (1 can)
- 2 heaping spoonfuls of pesto

In a large pot heat oil and bacon over high heat until bacon is well browned
- 3 tablespoons olive oil
- 1/2 pound bacon slices, roughly chopped
- 4 garlic cloves, thinly sliced
- 2 cups chicken stock
- 1/3 cup cider vinegar
- 2 tablespoons sugar
- 1 bunch collard greens, ribs removed
- 1 bunch mustard greens, ribs removed
- 1 bunch red Swiss chard, ribs removed
- Salt and freshly ground black pepper

- 3 curly kale leaves with stems, coarsely chopped
- 4 sprigs flat-leaf parsley
- 2 tart apples (such as Granny Smith), cored, and coarsely chopped
