Cranberry-Bourbon Relish

Heat the oil in a medium saucepan over medium-high heat
- 1 1/2 tablespoons canola oil
- 1 small onion, finely diced
- 1 jalapeno or serrano, finely diced
- 2 cups fresh orange juice
- 1 cup bourbon
- ¼ cup granulated sugar
- ½ cup light brown sugar
- 1 lb fresh cranberries or frozen, thawed
- 2 teaspoons grated fresh orange zest
- Salt and freshly ground black pepper
- ¼ cup chopped fresh flat leaf parsley or fresh cilantro

- 2 teaspoons kosher salt, divided use
- 1 large yellow onion, finely diced
- 3 large cloves garlic, minced
- 1 tablespoon chili powder
- 2 (15.5-oz.) cans black beans, rinsed and drained well
- 2 canned chipotles en adobo, minced (about 1 tablespoon), plus 3 tablespoons adobo sauce from can
- 1 to 3 tablespoons cider vinegar
- 1-1/2 cups fresh or frozen corn kernels (if frozen, thaw first)
- 1-1/2 cups (6 oz.) grated sharp cheddar cheese
- 1-1/2 cups (6 oz.) grated Monterey Jack cheese
- 3/4 cup chopped fresh cilantro
- Freshly ground black pepper

Toasted Marshmallow Ice Cream S'morewiches

- 10 oz bag marshmallows
- 1 vanilla bean
- 2 cups milk (I used 1%)
- 5 large egg yolks
- scant 1/2 cup sugar
- pinch salt
- 1 cup heavy cream
- 1 teaspoon vanilla
- graham cracker squares (homemade or store-bought)

Pumpkin Pie Creme Brulee

- * 3 1/2 cups heavy cream, divided
- * 1 teaspoon ground cinnamon
- * 1 teaspoon freshly grated nutmeg

- * 1 vanilla bean, seeds scraped and pod reserved
- * 8 egg yolks
- * 1 cup sugar
- * 1/2 cup whole milk

- * Hot water

Maple Butterscotch Pudding

Melt the butter in a medium sized saucepan
- 4 tablespoons butter, salted or unsalted
- 3/4 cup packed dark brown sugar
- 1/4 cup maple syrup
- 1/2 teaspoon salt
- 3 tablespoons cornstarch
- 3 cups whole milk
- 3 egg yolks
- 2 teaspoons Gelinotte Maple Liqueur (if unavailable use whiskey or rum, or omit the alcohol)
- 1 teaspoon vanilla extract

To make the cupcakes, preheat the oven to 350˚ F
- For the cupcakes:
- ¾ cup unsweetened cocoa powder
- 1 tbsp. instant espresso powder
- 1 ½ cups all-purpose flour
- 1 ½ cups sugar
- 1 ½ tsp. baking soda
- ¾ tsp. baking powder
- ¾ tsp. salt
- 2 large eggs
- ¾ cup warm water
- ¾ cup buttermilk
- 3 tbsp. vegetable oil
- 1 tsp. vanilla extract
- For brushing the cupcakes:
- Kahlua liqueur
- For the frosting:
- 12 tbsp. unsalted butter, at room temperature
- 4 cups confectioners’ sugar, sifted
- 7-8 tbsp. Kahlua liqueur
- 2 tbsp. heavy cream
