- 2 1/4 to 2 1/2 cups (9 1/2 to 10 1/2 ounces) King Arthur Unbleached All-Purpose Flour

Cumin Cornmeal Buns with Green Chili Cheese Butter

Dissolve yeast in the lukewarm water, and let sit until foamy, about 10 minutes
- 1 tablespoon active dry yeast or 2 teaspoons instant
- 1/2 cup (4 ounces) lukewarm (110°F) water
- 1 cup (8 ounces) milk
- 1/2 cup (4 ounces) buttermilk
- 1 cup (4 7/8 ounces) whole cornmeal
- 1/2 cup (3 1/2 ounces) sugar
- 1/2 cup (1 stick, 4 ounces) butter or margarine, softened
- 2 large eggs
- 2 teaspoons salt
- 1 teaspoon cumin powder
- 6 cups (1 pound, 9 1/2 ounces) King Arthur Unbleached All-Purpose Flour
- additional melted butter or margarine (about 6 tablespoons)

1. In a 2- to 3-quart pan over low heat, frequently stir butter and chocolate until melted and smooth
- 1/2 * 1/2 cup (1/4 lb.) butter
- 3 * 3 ounces unsweetened chocolate, chopped
- 1 1/3 * 1 1/3 cups sugar
- 2 * 2 large eggs
- 1 * 1 teaspoon vanilla
