Coconut Coffee Rum Cupcakes

Preheat the oven to 350 degrees and line your tins, and put the apple cider vinegar in the coconut milk
- 1 cup coconut milk
- 1 tsp apple cider vinegar
- 1 1/4 cup all-purpose flour
- 2 tablespoons corn starch
- 3/4 teaspoons baking powder
- 1/2 teaspoons baking soda
- 1/4 teaspoons salt
- 1/2 cup margarine or butter, softened
- 3/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 teaspoon coffee extract (other things that might work: Starbucks Via powder combined with a tablespoon of hot water, other instant coffee combined with a tablespoon of hot water, concentrated espresso. Straight-up coffee won’t do.)
- 1 teaspoon coconut extract (not 100% necessary, but important for flavor)
- 2 tablespoons of dark rum

Bring first 7 ingredients to a boil in a 6-quart Dutch oven
- 3 * 3 quarts water
- 2 * 2 teaspoons kosher salt, divided
- 1 * 1 medium onion, quartered
- 3 * 3 garlic cloves, smashed
- 1/2 * 1/2 teaspoon dried oregano
- 1 * 1 bay leaf
- 1/2 * 1/2 bunch fresh cilantro, tied with string
- 2 * 2 pounds firm white fish fillets
- 2 * 2 tablespoons olive oil
- 4 * 4 garlic cloves, pressed
- 1 * 1 (14 1/2-ounce) can diced tomatoes, undrained
- 2 to 3 * 2 to 3 canned chipotle chiles in adobo sauce, seeded, finely chopped, and divided
- 1/4 * 1/4 teaspoon ground cloves
- 1/4 * 1/4 teaspoon freshly ground black pepper
- 1 * 1 tablespoon fresh lime juice
- 2/3 * 2/3 cup mayonnaise
- 2 * 2 teaspoons adobo sauce from chipotle chiles in adobo
- 1 * 1 cup vegetable oil
- 12 * 12 corn tortillas
- 6 * 6 cups shredded iceberg lettuce
- 2 * 2 avocados, sliced

In a Dutch oven, add bacon and cook, turning as needed, over medium heat until crisp, about 5 to 7 minutes
- 3 bacon slices
- 16 ounces (1 pound) boneless, skinless chicken breasts, cut into bite-size pieces
- 1 cup diced onion
- 1 cup diced red bell pepper
- 3 garlic cloves, minced
- 4 1/2 cups chicken broth
- 1 3/4 cups diced red potatoes, peeled if desired
- 2 1/4 cups corn kernels
- 1/2 cup all-purpose flour
- 2 cups milk
- 4 ounces (about 1 cup) shredded cheddar cheese
- salt and fresh ground black pepper

Preheat oven to 350 degrees F
- 2 tablespoons granulated sugar plus an additional 2/3 cup, divided use
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon ground cardamom
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup unsalted butter
- 1/2 cup cream cheese, softened (1/2 package)
- 2 teaspoons honey
- 1/2 teaspoon vanilla paste (substitute 1 teaspoon vanilla extract)

In a large mixing bowl, cream together light brown sugar, sugar and butter
- Dough
- 4 tbsp softened butter
- 1/4 cup light brown sugar
- 3 tbsp sugar
- 1/4 tsp vanilla extract
- 2 tbsp vegetable oil
- 1/4 tsp salt
- 1/2 cup flour
- 1/4 cup chocolate chips
- 1-2 tbsp water
- corn starch for rolling dough in
Frozen Hot Chocolate

- 3 oz. semi-sweet or dark chocolate, chopped (I used choc. chips)
- 3 teaspoons store bought hot chocolate mix
- 2 1/2 tablespoons sugar
- 1 1/2 tbsp. peanut butter (optional)

- 3 cups ice
- Whipped cream

Grilled Pork Tenderloin with Bourbon Peach BBQ Sauce
