Homemade Chorizo

Rinse the dried guajillos, and then remove the stem and seeds
- 1 pound of ground pork
- 3 dried guajillos
- 1/4 cup apple cider vinegar
- 1/4 medium onion, diced
- 3 cloves of garlic, chopped
- 1/4 teaspoon cinnamon
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika (not smoked paprika as Mexican chorizo is decidedly not a smoked sausage)
- 1/2 teaspoon oregano
- 1/4 teaspoon cayenne
- 2 teaspoons salt
Homemade Nutter Butter Cookies

In a large bowl, beat the butter through vanilla until light and fluffy
- 1/2 c. unsalted butter
- 1/2 c. creamy peanut butter (I used Skippy Natural)
- 1/2 c. light brown sugar
- 1/2 c. sugar
- 3/4 tsp. coarse salt
- 1/2 tsp. baking soda
- 2 tsp. vanilla
- 1 egg
- 1/4 c. sour cream
- 3 TBSP cornstarch
- 3 c. flour

WHISK together egg yolks and 1/4 cup whipping cream; set aside
- 3 egg yolks
- 2 1/2 cups whipping cream, divided
- 1 1/3 cups sugar, divided
- 1 vanilla bean
- 3/4 cup butter or margarine, divided
- 5 frozen phyllo pastry sheets, thawed
- 1/2 cup powdered sugar
- 2 bananas, cut into 1/4 inch-thick slices
- Garnishes: sweetened whipped cream, grated chocolate

- 2/3 cup all-purpose flour

1. Peel, seed, and cube butternut squash
- 1 * 1 2-1/2- to 3-lb. butternut squash or 3, 12-oz. pkgs. frozen cooked winter squash, thawed
- 1/4 * 1/4 cup butter
- 1 * 1 medium onion, chopped
- 1 * 1 large carrot, coarsely chopped
- 1 * 1 stalk celery, coarsely chopped
- 2 * 2 cloves garlic, minced
- 2 * 2 large Braeburn or Gala apples, peeled, cored and chopped
- 1 * 1 48-oz. box reduced-sodium chicken broth
- 1 * 1 cup apple cider or apple juice
- 2 * 2 canned chipotle peppers in adobo sauce, coarsely chopped
- 1/2 * 1/2 cup sour cream
- 3 * 3 oz. smoked Gouda or smoked cheddar cheese, finely shredded
- * Crumbled cooked bacon, celery leaves, and/or shaved Gouda cheese (optional)

- 2 cups heavy cream
