Preheat your oven to 350 In a medium bowl, whisk together flours, baking powder, baking soda, nutmeg and salt
- 1 cup all-purpose flour
- 1 cup whole wheat pastry flour
- 3/4 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 8 tablespoons unsalted butter, softened
- 1/2 cup packed brown sugar (use dark if you have it)
- 1 teaspoon vanilla extract
- 3/4 teaspoon rum extract
- 2 large eggs
- 1/4 cup honey
- 3 ripe bananas, mashed
- 3/4 diced dried pineapple
- heaping 1/3 cup shredded coconut
Tequilla Coctel de Camarones (Shrimp Cocktail)

1. Mix everything together in a large bowl
- 1 1/2 lbs peeled and deveined Shrimp
- 48 oz V-8 juice, use
- 8 oz Salsa, homeade if you can swing it
- 8 oz Cocktail Sauce, homeade if you can swing it!
- 2 cups chopped Cilantro
- 4 diced Roma Tomatoes
- 2 diced Avocados
- 2 Limes, juiced
- 1 tsp Cumin
- 1 tsp Black Pepper
- 1/2 tsp Salt
- 1 shot Tequilla!
- 3 cloves Garlic, finely minced

- Salt and black pepper to taste
- 1 tablespoon vegetable oil or bacon grease
- 1 large yellow onion, cut into quarters
- 8 cloves garlic
- 1/4 cup red wine vinegar
- 2 cups beef broth
- 1 teaspoon ground cumin
- 2 jalapeños, seeds and stems removed, cut in half, lengthwise
- 2 leafy stems cilantro
- 1 bay leaf
- For the tacos:
- 2 poblano chiles
- 1 teaspoon vegetable oil
- 1 large yellow onion, cut into slivers
- 1 cup shredded Monterey Jack cheese (4 ounces)
