1. Place chicken in a resealable plastic bag set in a shallow dish
- 4 medium skinless, boneless chicken breast halves
- 1-1/2 cups margarita drink mix (contains no alcohol)
- 1 tsp. ground cumin
- 1 tsp. finely shredded lime peel
- 1/2 cup mayonnaise or salad dressing
- 2 Tbsp. lime juice
- 1/8 tsp. cayenne pepper
- 4 medium tomatoes, sliced
- 2 medium avocados, halved, seeded, peeled, and sliced
- 1/2 of a medium red onion, thinly sliced and separated into pieces

- 115 g (1 cup) finely ground almonds
- 120 g (1 cup) finely ground graham wafers
- 28 g (2 tablespoons) caster (superfine granules) sugar

Peach Cobbler Ice Cream

Whisk all the ice cream ingredients together in a large measuring cup
- Ice Cream:
- 1 * 1 (14-ounce) can sweetened condensed milk
- 1 1/2 * 1 1/2 cups heavy whipping cream
- 1 1/2 * 1 1/2 cups peach nectar
- 1/4 * 1/4 teaspoon almond extract
- * Small pinch kosher salt
- Grilled Peaches:
- 4 * 4 ripe peaches, pitted and quartered
- 1/4 * 1/4 cup light brown sugar
- 1 * 1 teaspoon vanilla extract
- 1/4 * 1/4 teaspoon allspice
- Topping:
