To make the crème brûlée: Place the cream and milk in a heavy small saucepan
- For the crème brûlée:
- 2/3 cup/150 ml whipping cream
- 1/3 cup/65 ml whole milk
- 1/2 teaspoon/about 1.5 g unflavored powdered gelatin
- 1/2 vanilla bean, split lengthwise
- 4 large egg yolks
- 1/4 cup/55 g superfine sugar
- 1/3 cup/75 g mascarpone cheese
- For the chocolate mousse:
- 5 ounces/150 g dark bittersweet chocolate, chopped
- 2 large eggs
- 1/4 cup/55 g superfine sugar
- 1 cup/230 ml heavy whipping cream
- Powdered sugar, for dusting
- Fresh raspberries, for garnish

Pumpkin Oatmeal

Add the pumpkin puree, milk, water, raisins, salt and pumpkin pie spice to a large saucepan
- 1 (14-oz) can pumpkin puree
- 2 cups water
- 2 cups milk (or water, if you prefer)
- 2 tablespoons raisins (plus extra for serving, if desired)
- 1/4 teaspoon kosher salt
- 3/4 teaspoon pumpkin pie spice (or substitute w/ a combo of cinnamon, cloves, ginger, and nutmeg)

Refreshing Cranberry Vinaigrette

- 1/4 cup red wine vinegar
