Maple Chile Popcorn

Preheat oven to 300°. Coat a 15 x 10-inch jelly-roll pan or other large rimmed baking pan with cooking spray
- Cooking spray
- 8 cups popcorn (popped without salt or fat)
- 1/2 cup maple syrup
- 1 tablespoon butter
- 1/2 teaspoon salt
- 1/2 teaspoon ground red pepper
Root Beer Bundt Cake

Preheat the oven to 325 degrees
- For the cake
- 2 cups root beer (not diet)
- 1 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, cut into 1-inch pieces
- 1 1/4 cups granulated sugar
- 1/2 cup firmly packed brown sugar
- 2 cups all-purpose flour
- 1 1/4 tsp baking soda
- 1 tsp salt
- 2 large eggs
- For the Root Beer Fudge Frosting
- 2 oz. dark chocolate (60% cacao), melted and cooled slightly
- 1/2 cup unsalted butter, softened
- 1 tsp salt
- 1/3 cup root beer, plus more as needed
- 2/3 cup unsweetened cocoa powder
- 2 1/2 cups confectioners' sugar
Pumpkin Pie Pancakes

Combine the dry and wet ingredients
- Mix:
- 2 cups flour
- 4 tsps baking powder
- 1 tsp cinnamon
- 1/8 tsp each nutmeg & allspice (I use less - a pinch of each - small pinch!)
- 3/4 cup sugar
- Mix:
- 1 1/2 cup canned pumpkin (or fresh, cooked and mashed)
- 3 eggs
- 1 cup milk
- 3/4 cup vegetable oil
- 1/2 tsp vanilla
S'Mores Cupcakes

1. Bake the Cupcakes: Preheat oven to 350 degrees F
- For the Cupcakes:
- 1 1/2 cups all-purpose flour
- 1-1/3 cups graham flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons ground cinnamon
- 10 ounces (1 1/4 cups) unsalted butter, room temperature
- 2 cups light brown sugar
- 1/4 cup honey
- 6 eggs
- 2 teaspoons vanilla extract
- For the Chocolate Ganache Glaze:
- 4 ounces semisweet chocolate, finely chopped
- 1/2 cup heavy cream
- For the Marshmallow Frosting:
- 1 envelope unflavored gelatin (1 tablespoon)
- 1/3 cup plus 1/4 cup cold water
- 1 cup granulated sugar
Jalapeno Hot Sauce

Heat 2 tablespoons of the oil in a medium saucepan over medium heat
- 6 tablespoons canola oil
- 1 small yellow onion, coarsely chopped
- 10 jalapenos, stemmed, seeded and coarsely chopped
- 1 clove garlic, coarsely chopped
- 2 cups rice vinegar
- 1 cup water
- 2 teaspoons kosher salt
- 1 ½ tablespoons honey
- ¼ cup cilantro leaves

- 12 ounces gingersnaps (about 48 cookies), finely ground
- 1/4 cup sugar
- 1/4 cup melted butter
- 32 ounces 1/3-less-fat cream cheese
- 4 large eggs
- 2 cups refrigerated or canned eggnog, divided
- 2 cups powdered sugar
- 2 tablespoons all-purpose flour
- 1 cup whipping cream
- Garnish: freshly grated nutmeg

- For the Swirl:
- 3 ounces cream cheese, room temperature
- 2 tablespoons unsalted butter, room temperature
- ¼ cup sugar
- 1 large egg
- 1 tablespoons all purpose flour
- 2 tablespoons Bailey’s Irish Cream
- For the Brownies:
- 6 ounces sweet baking chocolate (I used semisweet), chopped
- 3 tablespoons unsalted butter, room temperature
- ½ cup sugar
- 2 large eggs
- ½ cup all purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- For the Glaze:
- 4 ounces sifted powdered sugar
- 1 tablespoon Bailey’s Irish Cream
- milk to thin out (amount will vary)
