Pumpkin Yeast Bread

Though pumpkin is available in cans all year long, I seem to associate this bread with autumn
- 1/2 cup warm water
- 2 packages (2 tablespoons) active dry yeast
- 2/3 cup warm milk
- 2 large eggs, beaten
- 1 1/2 cups puréed pumpkin, either fresh or canned
- 2 tablespoons vegetable oil
- 6 1/2 cups (approximately) King Arthur Unbleached All-Purpose Flour
- 1/2 cup brown sugar
- 2 teaspoons salt
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cardamom
Seafood Risotto

Heat the oil in a large, heavy skillet
- 1 * 1 tablespoon extra virgin olive oil 1/2 cup chopped onion
- 1 * 1 clove garlic, crushed
- 1 * 1 cup Arborio rice
- 2 * 2 cups chicken broth
- 1/2 * 1/2 cup diced zucchini
- 1/2 * 1/2 pound shrimp, peeled & deveined
- 1/2 * 1/2 pound scallops
- 1/2 * 1/2 pound cooked lobster meat, coarsely chopped
- 1/2 * 1/2 cup frozen peas
- 1/4 * 1/4 cup chopped fresh flat-leaf parsley
- 3 * 3 tablespoons freshly grated Parmesan cheese

- 3 Tbsp plus 1 teaspoon butter
- 1/2 cup chopped shallots
- 1 cup arborio rice
- 1/2 cup dry white wine (or 1 Tbsp lemon juice and 1/4 cup water)
