Cheesecake-Stuffed Dark Chocolate Cake

Grease 2 (9") round cakepans, and dust with cocoa
- Unsweetened cocoa
- 1 (18.25-oz.) package devil's food cake mix
- 1 (3.4-oz.) package chocolate instant pudding mix
- 3 large eggs
- 1 1/4 cups milk
- 1 cup canola oil
- 1 tablespoon vanilla extract
- 1 1/2 teaspoons chocolate extract (optional)
- 1 teaspoon almond extract
- 3 (1.55-oz.) milk chocolate bars, chopped (we tested with Hershey's)
- 3 (16-oz.) cans homestyle cream cheese frosting
- 3 (7.75-oz.) boxes frozen cheesecake bites, coarsely chopped (we tested with Sara Lee)
- 1 (12-oz.) jar dulce de leche caramel sauce (we tested with Smucker's)
- Double chocolate rolled wafer cookies, coarsely broken (we tested with Pirouline)
- Chocolate fudge rolled wafer cookies, coarsely broken (we tested with Pepperidge Farm)
Maple Pecan Pumpkin Squares

Sift the flour, baking powder, baking soda, kosher salt, cinnamon, nutmeg and ginger into a large bowl
- Bars
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground ginger
- 1 (29 ounce) can of pumpkin puree
- 1 2/3 cup sugar
- 3/4 cup canola oil
- 3 large eggs, at room temperature
- 1/2 teaspoon maple extract
- 6 ounces unsalted pecans, chopped
- Frosting
- 1 1/2 cups powdered sugar
- 1/4 cup unsalted butter, softened
- 6 ounces cream cheese, softened
- 1/4 teaspoon maple extract
- 1/2 teaspoon vanilla extract
- Extra chopped unsalted pecans for topping
Spicy Chicken Stew

Place potatoes, corn, celery, carrots, onion and garlic in slow cooker
- * 2 baking potatoes (about 1 1/2 lb.), peeled and cut into chunks (3 1/3 cups)
- * 1 (10 oz.) package frozen sweet corn
- * 2 stalks celery, chopped
- * 2 carrots, peeled and cut into chunks (1 cup)
- * 1 onion, thickly sliced
- * 2 cloves garlic, minced
- * 1 (12.5 oz.) jar salsa
- * 2 teaspoons kosher salt
- * 1 1/2 teaspoons ground cumin
- * 1 teaspoon chile powder
- * 1/2 teaspoon black pepper
- * 1 skinless, boneless chicken breast, halved (about 1 lb.)
- * 4 skinless, boneless chicken thighs (about 10.5 oz.)
- * 2 1/2 cups chicken broth
- * 4 (6 inch) fresh corn tortillas, cut into strips
Grilled Herb Pork Tenderloin

Combine first 9 ingredients in a blender or food processor; process until almost smooth
- 1/4 cup fresh oregano leaves
- 1/4 cup fresh sage leaves
- 1/4 cup fresh orange juice

Preheat the oven to 350F. Line one 6 count muffin tin with paper liners
- For the Cheesecake Bottoms
- 3/4 c. graham cracker crumbs
- 2 tbsp butter, melted
- 1/2 tbsp granulated sugar
- 3/4 tsp cinnamon
- For the Cheesecakes
- 1 8 ounce block of cream cheese
- 1/4 c. granulated sugar
- pinch of salt
- 1 tsp vanilla extract
- 1 large egg, room temperature
- 1 tbsp heavy cream

Salted Banana Caramel Panna Cotta (D. Leibovitz)

* In a medium sized bowl, sprinkle gelatin over cold water and let sit sit for 5-10 min
- 3 T cold water
- 1 pkg. Knox gelatin
- 1/3 cup water
- 1/3 cup sugar
- 1/2 tsp salt
- 1 ripe banana, pureed/mashed very well (I used a small potato ricer)
- 1 cup heavy cream
- 1 cup 2 % milk
- 1 tsp vanilla
- 2-3 tsp dark rum (optional)
- 5 chocolate cookie wafers, crushed*

- For Cake Base:
- 2 -2 sticks butter, softened
- 1 1/4 -1 1/4 c packed brown sugar
- 3 -3 large eggs
- 1 -1 tsp ground ginger
- 1 -1 tsp vanilla
- 1/4 -1/4 tsp salt
- 1 1/2 -1 1/2 c all purpose flour
- 1/4 -1/4 c chopped dried cranberries
- 1/3 -1/3 c Baker’s White Chocolate, chopped
- For Frosting:
- 4 -4 oz softened cream cheese
- 1 1/2 -1 1/2 c powdered sugar
