Ratatouille with Spicy Sausage

Remove the sausage meat from the casings
- 2 (4-ounce) links spicy Italian turkey sausage
- 3 zucchini (yellow or green), cut lengthwise into 1/2-inch-thick slices
- 1 medium white or red onion, sliced into 1/2-inch-thick rings
- 1 eggplant (about 1 1/2 pounds), cut lengthwise into 1/2-inch-thick slices
- 2 red, yellow, or green bell peppers, roasted, peeled, and cut into 1/2-inch squares
- 1 (14.5-ounce) cans no-salt-added fire-roasted diced tomatoes
- 1 tablespoon grated lemon zest
- 1 tablespoon chopped fresh basil

1. Chop chocolate into small chunks and put in a heatproof bowl
- 8 ounces good quality bittersweet or semisweet chocolate, 62% cacao or higher

- 2 tablespoons rose flower water

- 2/3 cup sugar
- 1 envelope unflavored gelatin
- 2 cups whipping cream

S'Mores Truffles

1. In a double boiler over barely simmering water, combine chocolate, butter and heavy cream
- 12 ounces high quality semisweet or bittersweet chocolate, chopped
- 3 tablespoons unsalted butter
- 1/3 cup heavy cream
- 1 teaspoon vanilla extract
- 3 tablespoons Fluffed Marshmallow Vodka (see step #2)
- 20 miniature marshmallows (optional)
- 4 sheets of graham crackers, crushed into crumbs
