Separate the leaves of chard from the stems
- 1/2 lb chard (about 1/2 bunch)
- 2 sausage links, diced (about 1/2 lb)
- 1 large onion, diced
- 1 large red pepper, diced small
- 2 teaspoons smoked paprika
- 1 teaspoon oregano
- 2-3 garlic cloves, minced
- 1 cup arborio rice
- 1/4 cup white wine
- 6 cups chicken stock
- 1 cup grated hard cheese, like Parmesan, Pecorino, or Gruyere
- Salt and Pepper

To make the crust, preheat the oven to 375° F
- For the crust:
- 1 ½ cups graham cracker crumbs
- 3 tbsp. sugar
- ½ tsp. cinnamon

Chicken Tortilla Casserole

Pat the chicken breast halves dry and season with salt and pepper
- 2 boneless, skinless chicken breasts, butterflied into halves (4 halves total)
- 2 tbsp. vegetable oil, divided
- 1 shallot, minced

Preheat oven to 350 F. In a small bowl, mix sugar and lemon zest
- Tea-Infused Butter Ingredients:
- 1 cup unsalted butter
- 32 grams (about 1/3 cup) whole leaf Earl Grey tea
- Directions:
- In a small saucepan, melt the butter on medium-high heat until just melted.
- Add the tea leaves.
- Continue heating the mixture for about 5 minutes on low heat.
- Remove from the heat and allow to stand for another 5 minutes.
- Pour the mixture through a fine sieve, pressing hard on the tea leaves to squeeze out as much butter as possible.
- Let the butter come to room temperature and refrigerate until it is no longer liquid or until ready to use.
- Cupcake Ingredients:
- 1 1/2 cup sugar
- Zest of 1 medium-sized lemon
- 2/3 cup tea-infused butter
- 3 eggs
- 1/2 tsp ground ginger

Cook noodles in a large pot of lightly salted boiling water until al dente, firm but tender
- 1 pound fusilli pasta (or other twisty noodles)
- 6 boneless, skinless chicken breasts (2-lbs.)
