Lemon-Dill Green Beans

This lemon and dill vinaigrette is a natural complement to green beans
- 1 pound green beans, trimmed
- 4 teaspoons chopped fresh dill
- 1 tablespoon minced shallot
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon lemon juice
- 1 teaspoon whole-grain mustard
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
Curried vegetable soup

Delicious, low cal, and very satisfying
- 1 chopped onion
- 3 cloves chopped garlic
- 2 tblsp grated ginger
- Olive oil to sauté
- 1 chopped red bell
- 1/2 chopped jalepeno
- 1/2 head cauliflower, chopped
- 1 chopped tomato
- 3 ribs celery, chopped
- 1/4 chopped cabbage( about 1 cup)
- 4 chopped carrots
- 1 small can coconut milk
- Chicken base
- 1 small can tomato purée
- 1/2 tsp chili flakes
- 2 tsp each turmeric, chili powder, curry powder, cumin, Garam masala
- Water

Heat oven to 350*. Prepare an 8-8" pan
- For the filling:
- 3/4 cup butter
- 1 1/2 cups flour
- 1 1/2 cups oats
- 1 cup brown sugar
- 1/2 tsp bkg soda
- 1/2 tsp vanilla
- 2 cups dates
- Zest and juice of 1 lemon
- Pinch of salt

- 2 cups flour
- 2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cardamom
- 1 tsp cinnamon
- 2 tsp allspice
- 1 tsp ground ginger
- 1/2 cup browned butter
- 2 cups sugar
- 1 tsp vanilla butternut, or just vanilla
- 4 eggs
- 3 cup grated carrots
- 2/3 cup chopped cashews
- Frosting
- 1/2 cup browned butter
- 8 oz cream cheese
- 1/2 tsp vanilla butternut, or just vanilla
- 3 cups powdered sugar
- 3-4 . Tblsp. hazelnut creamora or milk
- 1/4 tsp salt
Breakfast turkey sausage

- 3 lbs ground turkey (or venison)
- 2 lb ground pork
- 1 tblsp chili flakes, or 1 tsp cayenne
- 3 tblsp kosher salt

This is my friend Charo's family recipe
- 1/3 + cup oil
- 2 cups fish consomme' (if using fish if using chicken use chicken stock)
- 2 lbs fish-- shrimp, clams or white fish (or a combination of chicken and Chorizo)
- 1 cup Arborio rice
- 1 green pepper, chopped
- 1 roasted red pepper, cut into strips
- 6 oz peas
- 1 small onion, chopped
- 2 small fresh tomatoes, seeded and chopped
- 1 small garlic clove
- 1 small thread of saffron

Curry: Red with Chicken

Delicious and a very quick meal
- 1 can coconut milk
- 1 cup chicken broth
- 1-2 tblsp red curry paste ( more if you like to blow the roof of)
- 1 tblsp fish sauce
- 2 tblsp brown sugar
- 1 tblsp lime juice
- 1 red bell pepper (broil and remove the skin) sliced
- 1 can bamboo shoots, sliced into thin strips
- 1/2 cup fresh green beans, frenched
- 2 chicken breastsi
- 1 tsp sesame oil
- 1/4 cup sliced basil leaves
