Thai Chicken Saute

Cook rice according to package directions, omitting salt and fat
- 1 bag, boil-in-bag rice
- 1 1/2 lbs. Chicken breast tenders
- 1 Tbsp cornstarch
- 1 Tbsp fish sauce
- 4 tsp canola oil, divided
- 1 cup sliced onion
- 2 tsp minced garlic
- 1 tsp ground fresh ginger
- 1/2 cup light coconut milk
- 2 Tbsp hot chile sauce
- 1 Tbsp sugar
- 1 Tbsp fresh lime juice
- 2 Tbsp fresh cilantro, chopped
- 4 lime wedges
LEMON-BLACKBERRY PUDDING CAKES

Instead of making syrup, I used already made blackberry syrup
- 1 pint blackberries
- 1/2 cup plus 1 Tbsp fresh lemon juice (about 3 lemons)
- 1 cup plus 3 Tbsp sugar
- 3 Tbsp unsalted butter, melted, plus more for ramekins
- 3 large eggs, separated
- 6 Tbsp cake flour (not self-rising), sifted
- 1 cup milk
- 1/4 tsp salt
- Boiling water for pan
- 1/2 cup heavy whipping cream
Thai Vegetable Pizza

Preheat oven to 425°F. Spread garlic onto pizza crust and bake 8-10 minutes or until crisp
- 1 Pkg. Thin Pre-baked Pizza Crust
- 2 Garlic Cloves, minced
- 1/3 cup Creamy Peanut Butter
- 2 Tbsp Soy Sauce
- 2 Tbsp Rice Vinegar
- 2 Tbsp Honey
- 1 tsp Fresh Ginger, finely chopped
- 1/2 cup Red Bell Pepper, diced
- 2 Green Onions with tops, thinly sliced.
- 1 Large Carrot, peeled and cut into Julienne strips
- 1 cup Fresh Bean Sprouts
- 1/2 cup Fresh Cilantro
- Chopped Peanuts (optional)

- 1 bulb garlic
- 1 tsp canola oil
- 12-oz pkg. frozen-shelled sweet soybeans (edamame)
- 1/4 cup lemon juice
- 1/2 tsp ground cumin
- 1/3 cup snipped fresh Italian parsley
- 8 slices whole grain bread
- 4 oz reduced-fat Monterey Jack cheese, sliced

Combine 2 cups flour, oats, brown sugar, baking soda and salt in a large bowl
- 2 1/3 cups all-purpose flour, divided
- 2 cups old fashioned oats
- 1 cup packed brown sugar
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup butter, melted
- 2 cups (12-ounce package) semi-sweet chocolate morsels
- 1 1/2 cups chopped Walnuts
- 1 cup caramel ice cream topping
